I learned the basics of making cheese.” He started FTR in 2023 during the pandemic, a time that wasn’t conducive to introducing new personal products to Green Beaver customers without being able to be face-to-face with them. When he couldn’t visit clients, he took a leap toward his passion – and a dream – to one day start a small cheese shop. That leap made, he contacted a well- LOPXOGSPNBHÍSFJOUIFQSPWJODF.BSHBSFU 1FUFST.PSSJTPG(MFOHBSSZ'JOF$IFFTFOFBS Lancaster, Ont., about an hour’s drive from Hawkesbury. 1FUFST.PSSJTIBTCFFONBLJOHDIFFTF since the 1990s, and her company also specializes in providing technical support to artisanal cheesemakers and distributes supplies to help fromageries with their build out. .ÊOBSE BQQSPBDIFE IFS BT IF XBT setting up his space, and she consulted on the design. The affinage room, a fairly tight rectangle with large windows facing out onto the store, has a series of shelves on which might be perched up to 100 wheels of cheese each weighing between five and ten kilograms – some encased in black food-grade wax. The room is controlled for precise conditions of temperature and humidity to facilitate the cheese’s ideal evolution and encourage the various microbes – yeasts, bacteria and fungi molds – that help spur milk into becoming cheese. Hard cheeses and soft cheeses require different aging conditions in terms of humidity and time. Like good wine, it starts with terroir .ÊOBSETDIFFTFJTNBEFBU(MFOHBSSZ and he says FTR strives to make some- thing a little bit different, “something a little more traditional.” The result is FTR organic cheese – starting with organic cow’s milk, of course – and what he refers to as “artisanal” cheese that is made “the way they used to make cheese.”

Une coopérative (ou coop) est une organisation formée par des individus qui mettent leurs ressources en commun pour atteindre des objectifs qu’ils partagent. Les coopératives sont parfois essentielles pour soutenir les communautés rurales et stimuler les économies locales. FONCTIONNEMENT Une coopérative est détenue et gérée par ses membres, en l’occurrence des agriculteurs. Chaque membre participe à la prise de décision, et ce, indépendamment de la taille de son exploitation ou de sa contribution financière. Shortly after 4:30 a.m. on December 2, police responded to a single-vehicle collision where Wood was tested using an Approved Screening Device and charged with impaired driving and driving with a blood alcohol concentration over 80. On September 19, 2024, Wood pleaded guilty to careless driving. As a result, he received six demerit points and a likely increase in insurance costs. The United Counties of Prescott and Russell (UCPR) have launched a new pilot partnership with the Prescott- Russell Community Development Corporation (PRCDC) to implement five key initiatives from the recently adopted 2024–2029 Economic Development Strategy and Action Plan. The 18-month initiative signals a strategic shift in how the UCPR approaches econo- mic and community development, moving from planning to action by leveraging local expertise. “This partnership demonstrates our wil- lingness to take concrete action in today's economic context,” stated Yves Laviolette, 8BSEFOPGUIF6$13i#ZDPMMBCPSBUJOHXJUI the PRCDC, we're banking on what really matters, being the vitality, innovative ideas, successes, and potential of our community's businesses.” The PRCDC will oversee the execution of five priority actions in collaboration with community organizations and local leaders, which include developing a brand and
