Method 1.
Mix ⅔ cup Gutsy Gummies with 100 ml water in a bowl, stirring to combine.
2. Add 400 ml recently boiled water, mixing thoroughly. 3. Divide the gummy mixture evenly between the 5 jars or containers, then refrigerate for 30 minutes, or until set. 4. Once the gummy layer is set, divide the vanilla yoghurt evenly among the containers. 5. Top each jar with chopped fruit and granola. 6. Secure the lids on the containers and refrigerate until ready to eat.

⅔ cup Thriving Family - Vanilla 2 cups unsweetened desiccated coconut 4 medjool dates, pitted ¼ cup maple syrup ¼ - ½ cup water (adjust as needed) Pinch of salt (optional) For the funfetti: ⅓ cup sprinkles (for rolling, optional) ⅓ cup desiccated coconut (for rolling)
Add all the protein ball ingredients to a food processor and blitz until well combined, adding a little more water if needed. 2. Combine the desiccated coconut and sprinkles (for the funfetti) in a bowl, ready for coating. 3. Roll the protein ball mixture into small balls and coat them in the funfetti mixture.

In a bowl, mix together the cream cheese, Veggie Hero, salt, garlic powder, and lemon juice until well combined. 2. For a lunch box snack, place some of the dip in a small container or dip compartment, and add a selection of veggie sticks (carrots, cucumbers, and celery) to the lunch box. 3. To make the snack train, cut the top third off the red, yellow, and green capsicums and remove the core and seeds. Arrange them in a line on a platter or chopping board. 4. Use toothpicks or some of the cream cheese mixture to secure cucumber rounds as wheels to the base of the capsicums. 5. Place the dip in the first compartment, then the vegetable sticks in the second and third compartments. 6. Enjoy the cuteness of your snack train!

Whisk 6 eggs with Veggie Hero, then cook gently in the pan, stirring until scrambled. 5. Add spring onions, tamari, and peas. Stir in vegetables and rice. Taste and adjust seasoning. 6. Transfer to a baking tray lined with baking paper. 7. Whisk the remaining 6 eggs and pour over the mixture. Stir to combine. 8. Sprinkle with cheese and bake for 25–30 minutes, until golden and set. 9. Cool before slicing into portions. Store in the fridge for lunchboxes!

Preheat the oven to 180°C. 2. In a large bowl, mix together the Thriving Family, plain flour, baking powder, everything bagel seasoning, salt, and pepper. 3. Add the eggs, zucchini, baby spinach, chives, olive oil, cottage cheese, and cheddar cheese to the dry ingredients. Mix until just combined. 4. Divide the mixture into silicone muffin trays, leaving about 2 cm of space at the top of each. 5. Sprinkle a little extra cheddar cheese on top of each muffin. 6. Bake for 30–35 minutes, or until cooked through and the tops are golden brown. 7. Allow the muffins to rest for 10 minutes before turning them out onto a cooling rack. 8. Store in an airtight container in the fridge.

2/3 cup Gutsy Gummies (any flavour) 100 ml water 250 ml boiling water ¼ watermelon 1 rockmelon 1 honeydew melon 1 punnet blueberries Star, heart, flower cookie cutters 12 skewers
Mix 2/3 cup Gutsy Gummies with 100 ml water in a bowl, stirring to combine. 2. Add 250 ml boiling water, mixing thoroughly. 3. Pour the gummy mixture into a container at least 2.5 cm deep, or into moulds. Refrigerate for 1 hour, or until set. (Tip: Silicone containers make turning out easier.) 4. While the gummy mixture sets, slice the watermelon, rockmelon, and honeydew into thick, 2 cm slices. Use cookie cutters to press out flower, heart, and star shapes. 5. Once set, turn out the gummy mixture and slice into 2.5 cm cubes. 6. Thread fruit shapes, blueberries, and gummy cubes onto 12 skewers, alternating for a colourful presentation. 7. Refrigerate the skewers on a platter until ready to serve.

In a bowl, combine ⅓ cup of Gutsy Gummies with 100 ml of water and stir well. 2. Pour in 250 ml of recently boiled water, mixing thoroughly. Repeat this process with the remaining gummy mixture in a different flavour. 3. Divide the chopped fruit evenly among the silicone moulds. 4. Place the moulds on a chopping board to make transferring them to the fridge easier. 5. Pour the gummy mixture evenly into the moulds over the fruit. 6. Refrigerate for 30 minutes, or until set. 7. Turn out the gummies onto a plate or store them in an airtight container. Enjoy!
