Evolving in St. Thomas: Space Snacks & Galactic Sodas Café by Peri Hayes Mother-daughter duo, Jennifer Cheeseman and Rebecca Walsh, delightedly launched their second location of Space Snacks & Galactic Sodas Café on November 14th, 2025. The pair had begun this venture by working vendor markets for four years, prior to opening their Grand Bend establishment wherein they were thrilled to add Shaw’s ice cream to their inventory. Presently residing in London, Jennifer details what brought their business to St. Thomas: “This wasn’t a service which was accessible here, and we found a local spot. I am originally from Nova Scotia, and have really been enjoying the community feeling in St. Thomas.” Jennifer describes what their business entails: “We have an exten- sive menu of sodas, as well as lemonades, and ‘dirty’ Monster, Red Bull and Alani. We also sell Alani by the can and case.” These soda and energy beverages are complemented with flavoured syrup, and can contain candy, coconut milk, cream and so forth to satisfy your sweet tooth. Jennifer shares that while their fruit flavours are well enjoyed, Dr. Coconut has been a particularly popular order -- featuring Dr. Pepper matched with coconut and cream. Further to this, they sell an array of syrup flavours by the bottle for creating your own coffee, dirty soda or custom beverage at home. Jennifer cheerfully expresses, “This is unique to the area, as no one else is offering this service here. We are excited to expand our menu, and are looking into having Shaw’s ice cream at our St. Thomas store, as well.”
In collaboration with their London-based supplier, Sweetopia Bakery offers croissants, cheesecake in a jar, a selection of mini cakes, stuffed cookies, scones and more. Meanwhile, in-house, Jennifer and Rebecca prepare mini cheesecake (gluten-free), lemon bars, nanaimo bars, peanut butter balls, and the list goes on. Moreover, Space Snacks carries a wide assortment of freeze- dried goodies, such as Rainbows (Skittles), Space Clusters (Nerds) and beyond. Jennifer assures that they will continue to incorporate more fruit options as they come into season. Their versatile menu also includes the following meals: breakfast sandwiches, panini sandwiches and nachos, along with Al- fredo and Marinara pasta. Their Grand Bend store will open during the long weekend in May until Labour Day Weekend. Jennifer and Rebecca are also pleased to announce that they will be returning to The Pinery from May 3rd until Thanksgiving.
