Letter from the Editor As we turn the calendar to January, I’m reminded of something my late wife Staci always used to say: “Never complain about getting old. It’s a privilege denied to many.” Wise words and truer than she ever knew. So, while, as we welcome 2025, I might be feeling every one of my years, I’ve resolved to live this year healthier than the last. I said the same thing last January, of course, but my body had other plans. I managed to injure myself twice within the first month and spent months trying to recover, only to have my shoulder start giving me grief by summer. This year, I’m determined to help my body hold itself together with better exercise and a healthier diet. Here’s hoping my joints cooperate long enough for me to make it through the first quarter unscathed! On a brighter note, I recently enjoyed a family trip to Disney World. One of the highlights was visiting Epcot, where you can travel the world in an afternoon without leaving Florida. It reminded me of the upcoming fifth anniversary of the Global Flavours initiative here in St. Thomas and across Elgin County. This annual event invites you to stamp your culinary passport by sampling dishes from Europe, South America, Asia, Jamaica, and more. It’s a fantastic way to expand your palate while supporting local restaurants. Why not start the year by exploring the world — one bite at a time? Speaking of magical journeys, you won’t want to miss our article on the unforgettable trip local students from John Wise Public School and June Rose Callwood Public School took to the North Pole. This heartwarming adventure was the dream of a retiring teacher who wanted to create one last moment of magic for her students. Thanks to a private donor, dedicated volunteers, and some serious coordination, this once-in-a-lifetime experience became a reality. If that story doesn’t put a smile on your face, I’m not sure what will. Lisa’s Wholehealth Pharmacy by Peri Hayes

Lisa Smith, RPh, BScPhm, CDE and CGP, fondly recalls, “Growing up, I watched my parents run their own variety store — Sunset Variety — for almost 30 years, with dedication, integrity and a personal touch that drew in loyal customers.” Through her responsibilities at her parent’s store, Lisa learned the value of building relationships and more. “After working in the corporate pharmacy world as a community pharmacist for over 18 years,” Lisa continues, “I’ve decided to follow in my parent’s entrepreneurial footsteps by opening my own pharmacy. My certifications in diabetes care and geriatric care have allowed me to provide tailored, expert advice, helping patients manage their conditions and improve their quality of life.” Continuously refining her skills, Lisa proudly serves as a Preceptor for 4th-year pharmacy students at the University of Waterloo School of Pharmacy and as an Assessor for candidates applying to PACE to practice as pharmacists in Ontario through the Ontario College of Pharmacists. Furthermore, having earned a Bachelor of Science from the University of Western Ontario and a Bachelor of Science in Pharmacy from the University of Toronto, Lisa voices, “While the corporate world offered me invaluable experiences, I found myself yearning for the freedom to practice pharmacy in a way that aligns with my vision -- one that prioritizes patient care above all else. By opening my own pharmacy, I aim to create a space where patients feel heard, respected and empowered.” With plans to open Lisa’s Wholehealth Pharmacy on January 20th, the entrepreneur encourages, “Look out for an exact opening date on social media pages, advertising streams and word of mouth.” She proceeds to describe, “The layout of the pharmacy includes the traditional dispensary and front shop, but it is designed with a boutique feel; creating a unique and elevated care experience for anyone walking through the doors.” This pharmacy will employ a knowledgeable and welcoming Pharmacy Assistant who has been working alongside Lisa for over 10 years: “My new pharmacy will also feature dedicated clinical examination rooms, designed to support collaborative healthcare initiatives. With these facilities, I hope to attract at least one or two local family physicians to the area, addressing the significant need for patients who currently lack access to family doctors. This vision aligns with my goal to create a community-focused healthcare space that meets diverse patient needs.”

Lisa shares that her debuting business will entail the following: “Over-the-counter medications; home healthcare products; nutritional supplements and vitamins; medication reviews; injection administration services; prescribing for minor ailments [as provided by Ontario law]; prescription renewals and compliance packaging.” This pharmacy will be located at 1055 Talbot Street, Unit #7, operating Monday to Friday from 9:00 am until 6:00 pm and on Saturday from 9:00 am until 2:00 pm. Salute to First Responders: EMS

Sponsored by #Ivegotyourback911 Shaun Taylor has spent the last 15 years serving Elgin County as a paramedic. “I’ve only held the role of paramedic since starting my career in EMS,” he shares, but it’s a role that has profoundly shaped his life. Before becoming a paramedic, Shaun worked as a surgical specialist in the medical device industry. When he decided to transition careers, paramedicine felt like a natural next step. “I’ve always been interested in the medical field and helping those in need,” he explains. “Whether it was providing quality surgical equipment to hospitals to achieve positive clinical outcomes or being a front-line first responder providing hands- on care, both appealed to me.” A typical day for Shaun begins with a thorough check of his ambulance. “I make sure it’s ready to respond to any kind of call we might receive,” he says. After that, anything can happen. “The best thing about being a paramedic is that every day is different. We never know what kind of calls we’ll get.” The variety in his work is tied closely to the unique characteristics of Elgin County. “Depending on the time of year, we might spend an entire shift responding to car accidents during a heavy snowfall. In the summer, we cover multiple beaches and tourist areas. The farming season brings its own challenges, like machinery accidents, and we also handle incidents on the 401, one of Canada’s busiest highways.” Despite the unpredictability, Shaun loves his work. “Every day is completely different, and I can make a real impact when someone requires help.” However, the challenges of being a paramedic are significant. “A major challenge for first responders is the mental aspect and the trauma we’re exposed to throughout our careers,” Shaun says. He’s witnessed positive changes over the years, including the implementation of Canada’s First Responders Act. “This law allows first responders presumptive legislation for a diagnosis of PTSD caused by the job. It’s made it easier for those needing assistance to heal and possibly return to work. It’s a huge step forward.” When asked how he manages the stress, Shaun highlights the importance of support systems. “Everyone deals with stress differently because we’re all unique. For me, having a strong

support system at home is incredibly important. Not all first responders have that. Being able to talk to a therapist and understand your feelings is crucial. Working for a service that values mental health also makes a big difference.” Shaun offers practical advice for anyone considering a career as a paramedic: “You should have some life experience behind you and talk to paramedics to understand the kinds of trauma you’ll encounter. There’s nothing in a classroom that will prepare you for the reality of the job. Speaking with other first responders — paramedics, police officers, and firefighters — is the best way to decide if this career is right for you.” Shaun’s dedication to his work remains unwavering through the unpredictability and challenges. Championship City Boxing Club by Peri Hayes

Coordinator, Lini Sopoco, opened Championship City Boxing Club in 2016 alongside her husband and son. Lini cheerfully introduces, “We are a family-run business that has a passion to help youth and adults create confidence, build identity and support the community. My son has been a boxer from the age of 11, inspired by family connections from years gone by. He is now our Head Coach and his 14-year-old son, Noah, boxes as well.” Championship City Boxing Club offers classes three evenings throughout the week, as well as in the afternoon on Saturdays. Lini notes, “All members, once registered, are given basic training regarding footwork and the basic jab, cross instructions. They are integrated into cardio and drills while

being encouraged by coaches and experienced members in more advanced steps.” Furthermore, Lini delightedly details their upcoming plans: “We compete annually in The Brampton Cup, which hosts over 750 competing boxers in February 2025.” People travel from out of province, as well as from across the world to attend this esteemed event. As Lini proudly presents, “2024 was the second year we entered anyone into Provincials. Our boxers are steadily improving, and gaining valuable experience competing with those at advanced levels. Two won Silver and my grandson won Gold, moving them to compete this past November in Nationals. Noah will compete in Quebec in May, 2025. This leads them in the direction of qualifying for the Olympics.” Lini thoughtfully reflects on their classes, highlighting “We quickly noticed the change from hesitation to more confidence, even in posture, within a few weeks. I love to see the difference in members’ outlook, hearing parents describe the difference it makes regarding school work and general happiness.” Advance registration through an online process is required with Boxing Ontario. “The cost is quite reasonable compared to many other sports,” Lini assures, “Once a person reaches out, we connect through email with helpful information to get started. We recommend them to come and watch a class,

ALL ABOARD! A Retiring Teacher’s Dream Trip with her Students After more than 30 years of teaching, Ruth Brown, a beloved educator at John Wise Public School, retired on December 21, 2024. Her departure marks the end of a remarkable career dedicated to teaching young minds, primarily in kindergarten. As her final gift to her students, Ruth brought to life a magical experience inspired by a story that has been dear to her heart throughout her career: The Polar Express . “I’ve read The Polar Express to hundreds of children over the years,” Ruth shares. “Every Christmas, I’d put on my conductor’s hat and read the story, bell in hand. The kids loved it, and so did I. When I started thinking about retirement, I thought, wouldn’t it be amazing to turn this story into reality?” Ruth’s dream came true this December, as five kindergarten and three Grade 1 classes from John Wise Public School, along with five classes from June Rose Callwood Public School, embarked on a Polar Express-themed journey aboard the Port Stanley Terminal Rail (PSTR). Over two days, 270 children experienced the magic of riding a train, many for the first time, in what Ruth described as the culmination of years of imagination and planning.

The journey began right outside John Wise Public School, where the train made a special stop. Ruth, wearing her conductor’s hat, greeted the children and punched their golden tickets as they boarded. “Seeing the train pull up outside the kindergarten yard was a dream come true,” she said. “The excitement on the kids’ faces was priceless.” The train ride to Port Stanley was filled with festive cheer. Ruth took the microphone to lead sing-alongs, share highlights of the journey, and call out children by name. Along the tracks, foil balloons shaped like woodland animals added an ‘I Spy’ element to the trip. The destination, at the Port Stanley station had been transformed into the North Pole, complete with Santa and Mrs. Claus running out to greet the train amidst the sound of the horn. “It was magical,” Ruth recalls. “The children were

This extraordinary event required an incredible team effort. Ruth credited her friends, family, and the Full-Day Kindergarten (FDK) team for their support. “There was so much to do, from setting up and decorating to preparing hot chocolate and cookies,” she says. “My daughter even hung foil balloons along the tracks to create the woodland animal scene. Everyone came together to make this happen.” The weeks leading up to the event were filled with themed learning activities. Ruth incorporated trains into every aspect of the curriculum, teaching children about local history, STEM concepts, and the story of The Polar Express. The school’s main hallway was turned into a train track using electrical tape, and children acted as train carriages as they walked to the gym for lessons. They built Lego landscapes and explored model trains to deepen their understanding. Ruth also partnered with fellow teacher, Marilyn Beaton from June Rose Public School, who is retiring at the same time. Together, they coordinated the two-day event, ensuring that all their students had the opportunity to participate. “Marilyn and I shared a train for the first day,” Ruth explains. “It worked out perfectly. We ironed out the wrinkles on the first day and had an even smoother experience for the kindergarten classes on the second.” The weather was another critical factor. “I was so nervous,” Ruth admits. “The week before, we had snow days and school closures. I prayed for the weather to cooperate, and thankfully, we had two perfect days. The next two days were bitterly cold, but everything worked out.”

The goal was to plant as much of a variety as I could to try out this system and to see how the different vegetables did. I was absolutely amazed with the results.”

One comment that I heard quite a bit was that the single-tower unit was too large for a single person or an older couple. That got me thinking that perhaps I should build a ‘Mini’, using the same technology. This gave birth to an additional four models.” Paul has begun locally presenting his AEROTOWER in full production: “The first that I am excited to announce is on the patio at Lockwood Books. These kind folks have offered to let me set up a demonstration unit. This one will be filled with fresh herbs. Imagine going there, picking a few leaves of almost 20 different herbs, making yourself a fresh herbal tea, then sitting down at a bistro table and reading a book!” Carrying starter kits and various parts, Paul also supplies the ‘Travelling Base’, which can significantly extend the growing season. Club Champions Lounge, Golf Simulator by Peri Hayes Business Owner, Ryan Jeffrey, delights that the inception of Club Champions Lounge came to fruition in August, 2024. Part Owner and CPGA Professional for 28 years, Jeremy Jeffery, joined the team, about whom Ryan enthuses, “His knowledge and expertise in the golf industry has helped with acquiring golf brands and manufacturers.” Ryan’s beloved wife, Julie Jeffrey, is their Marketing and Interior Design Director. “Club Champions Lounge is an indoor golf simulator — powered by Trackman — that’s suitable for all ages and playing abilities,” the partners detail. “Our goal is to provide the city with a new source of entertainment, but also to give golfers a place to play all year long, regardless of the weather, to advance their game with data and analytics. We also have a pro shop with brands that aren’t offered in the immediate area, including KJUS, TravisMathew, Dexim Golf and Puma. Ping is coming this January.” For 10 years, Ryan carried his dream of owning an indoor golf facility and had been searching for the appropriate setting to support this vision. Ryan and Jeremy were approached by an acquaintance at their local golf club, through which the pair learned about a building downtown that would become their venue for cultivating the Club Champions Lounge community. Ryan then revisited his business outline as he diligently accounted for the advancements in technology and prepared for funding, simultaneously beginning to design the space, secure contractors, and connect with potential brand partners

We only have two simple rules to use our bays: you will be required to have clean clubs and a pair of clean indoor shoes. This will help maintain the integrity of our mats and screens, and ensure we can offer an elevated experience for our guests for years to come.” The team passionately continues with the following sentiment: “We are extremely excited to be able to offer state-of-the-art indoor golf to the City of St. Thomas. We feel that there has been a lack of entertainment in the city, and we have a very large golfing community in the surrounding area. Whether it’s bringing the kids in for some animated mini golf or coming in with a group of friends to play some of the most iconic courses around the world, we have a little bit of something for everyone here at Club Champions Lounge.” This establishment is located at 539 Talbot Street, operating into the old 535 Talbot Street. Leadership in Bloom Starting in 2025, Janis Harris, co-owner of Harris Flower Farm and Pastured Pork, has been elected Vice President of the Association of Specialty Cut Flower Growers (ASCFG). This association connects over 3,000 members worldwide, mostly small-scale flower growers in North America. “The ASCFG is very education-based,” Janis explains. “There’s so much to learn through the association’s conferences, resources, and quarterly magazines. It’s been invaluable for growers like me.” Janis first became involved years ago when her parents gifted her a membership for her birthday. In 2017, recognizing the need for Canadian representation, the ASCFG elected Janis as its first Canadian Regional Director. She served two terms, paving the way for others, including the current representative from Nova Scotia. When the Vice President position opened up, Janis saw it as an opportunity to amplify the Canadian voice further. “I thought this was a good way to get another Canadian on the executive board,” she says. The association focuses on growers who produce unique and diverse crops — flowers that aren’t typically mass-produced. “Most of us are small-scale farmers growing multiple crops and varieties,” Janis notes. She highlights the importance of education within the industry, especially as misinformation often circulates online. “There are so many YouTube videos and Instagram accounts where people claim to be experts, but sometimes the advice isn’t accurate for certain regions. For example, growing flowers in Canada is very different from growing in Texas. The ASCFG ensures that the information shared is qualified, vetted, and reliable.” Janis’s passion for improving industry standards and sharing quality education is what drives her involvement, even as a

volunteer. “The more quality information out there, the better we can all grow,” she says. “The association does a lot around post- harvest handling, ensuring flowers last longer, and improving profitability for farmers. It elevates the entire industry.” Looking ahead, Janis is excited about reconnecting with the ASCFG community. “The first board meeting is in San Diego in January. I’ve met so many wonderful people through this association, and I’m looking forward to being active again.” Closer to home, Janis and her husband, Mark, continue to focus on extending their growing season at Harris Flower Farm. “We’ll have flowers up until Christmas and then start back up in February with tulips and other early blooms forced in our greenhouse. We’re not necessarily trying to get bigger, just sustaining what we’re doing and keeping fresh, locally grown flowers available year-round.” With Janis now taking on this leadership role, the ASCFG’s future looks bright, as Canada’s representation in the specialty cut flower industry.

Healthy People, Healthy Families, Healthy Communities Starting this January, Railway City Health Hut, located inside the Elgin Centre (417 Wellington St.), is launching a program to transform lives through simple, actionable steps. The initiative, called Healthy People, Healthy Families, Healthy Communities, provides participants with weekly guidance via email, including recipes, workouts, sleep recommendations, and stress management techniques. “The goal is to take small steps throughout 2025 to improve individual lifestyles and family habits and ultimately, to contribute to a healthier community,” says Angie Mailhot, Owner of Railway City Health Hut. Participants can sign up by providing their email address in-store. Once enrolled, they will receive curated content from local health professionals. “It’s about creating something simple, with small, manageable bites of change that people can do at home,” Angie explains. The program has a small fee of $10 per month. The program is designed to be inclusive. “Our ideal participant is anyone who wants to improve their health,” Angie says. Whether it’s parents seeking to foster healthier habits for their children, adults managing conditions like diabetes, or seniors looking to boost their well-being, the program offers something for everyone.” For those needing more personalized advice, Angie says, Railway City Health Hut also offers one-on-one consultations to address specific concerns. THE TURKEY SHOPPE One key message Angie wants to convey is that health doesn’t have to be complicated. “Your health is simpler than most people think,” she says. “It’s about eliminating processed

foods, focusing on real ingredients, and making small changes over time. For example, trying one new recipe a week can lead to 52 new meals in a year — that’s a significant shift.” The recipes and advice provided through the program will cater to a wide range of dietary preferences and needs. “We’ll emphasize simple, wholesome meals,” Angie notes. “It’s not about tofu and kale unless you want it to be; it’s about helping people understand what good, nutritious food looks like.” Angie encourages booking a consultation for those who feel too overwhelmed to take the first step on their own. “Sometimes you just need someone to sit down with you, listen, and help you prioritize,” she says. “The first step is often the hardest, but it’s also the most important.” Through Healthy People, Healthy Families, Healthy Com- munities, Railway City Health Hut aims to empower individuals and families to regain control of their health. “When people start making changes and see the results, it’s inspiring,” Angie shares. “Whether it’s someone walking around the block for the first time or running a marathon, it’s amazing to see how improving health transforms lives.”
