Grilled Corn and Ricotta Dip

Inspired by Saveur.com

This dip tastes great with bread, crostini, or crackers and will be a hit at any summer gathering. INGREDIENTS

• 6 ears of corn • 1 1/2 cups heavy cream • 1 1/2 cups ricotta • 2 tbsp all-purpose flour • 2 tbsp thyme, finely chopped

• Kosher salt and freshly ground black pepper, to taste • 1/2 cup Parmesan cheese, finely grated • 2 tbsp unsalted butter, diced • Chives and scallions, finely chopped

1. Preheat the oven to 325 F. 2. In a large grill pan on high heat, cook the corn until charred on all sides. Let cool, then cut the kernels from the cob. 3. In a food processor or blender, purée two-thirds of the kernels with the cream, ricotta, flour, and thyme. Season with salt and pepper, and stir in remaining whole kernels. 4. Pour into an 8-inch baking dish. Sprinkle Parmesan cheese on top, and dot with butter. Bake for approximately 1 1/2 hours, until bubbly. 5. Garnish with chives and scallions before serving.

keeping in contact with past, current, and potential clients. A great way to do this is to offer free tips about your industry. It may seem counterintuitive to provide something for free, but when the social media world sees you as an expert, it will pay you back. Don’t be a salesperson. As much as we may not want to admit it, we all use social media as a way of escaping. So, no one wants a sales pitch when scrolling. When creating content, put your sales cap away. Be present in the engagement and connection you’re fostering, and the sale will become natural. More viewers will flock to you if they know they won’t be pressured. It’s a sense of “false control” that allows you to keep in contact without forcing it. It’s part of life. Ignoring social media altogether is not the solution, either! These days, people rely on technology and social media to stay connected. They search for reviews online, establish credibility of a company by scrolling through their social media feed, and look for engagement opportunities to vet a business. While you don’t have to be the most popular person on social media, it’s important to accept it’s a reality that is here to stay.
