It’s the Holiday Season! 3 HOLIDAYS IN NOVEMBER With Halloween last month and Thanksgiving, Christmas, and New Year’s Eve on the horizon, we are in the middle of the holiday season! Besides Thanksgiving, All Saints’ Day, Dia de Muertos , and All Souls’ Day are celebrated this month. Let’s learn about these holidays and how these celebrations honor those who’ve passed away. All Saints’ Day This celebration honors the saints in Christian history every Nov. 1. It celebrates those who have passed away and entered Heaven — these can be apostles, church leaders, martyrs, and more. The celebration began during the reign of the Roman Empire when many Christians were persecuted. Several denominations of Christian churches set aside a special day to honor those who lost their lives. All Souls’ Day Following directly after All Saints’ Day, All Souls’ Day is celebrated on Nov. 2. Like All Saints’ Day, this holiday honors those who’ve died, but instead of remembering Christian martyrs and saints, All Souls’ Day honors your own family and loved ones. The holiday was established shortly after All Saints’ Day since Catholic priests created both celebrations. Countries worldwide observe this holiday and incorporate their own cultures and traditions into the festivities.
Dia de Muertos (Day of the Dead) When the Spaniards came to Mexico, they introduced Catholicism to the inhabitants. Locals combined their Aztec festival dedicated to the goddess Mictēcacihuātl, a woman who watched over the bones of the dead, with Catholic influences. On Nov. 1, families will celebrate children who’ve passed away, and on Nov. 2, they celebrate adults who are no longer with them. They will gather at cemeteries with candles and celebrate the lives of their loved ones with flowers, food, and music. ROASTED PORK LOIN WITH APPLES
Ingredients
• 4 lbs pork loin • 2 tsp garlic powder • 2 tsp salt, divided • 1 tsp black pepper • 8 apples
• 2 red onions • 3 garlic cloves • 1 tbsp brown sugar • 2 tbsp olive oil • 2 tsp cinnamon • 3 tbsp butter, softened
Directions
1. In a large bowl, season pork loin with garlic powder, 1 ½ tsp salt, and pepper, then cover and place in refrigerator for 30 minutes. 2. Preheat oven to 425 F. 3. Slice apples and onions, then chop garlic cloves. Season with brown sugar, olive oil, remaining salt, and cinnamon. 4. In a 9x13-inch baking dish, place a layer of apples and onions in the pan, put pork loin on top, then place remaining apples and onions around it. 5. Break butter into small pieces and place them on the pork loin and apples. Place dish in oven and let it bake for 15 minutes. 6. Reduce the heat to 350 F, then continue to bake for 60 minutes. 7. Remove dish and stir apples and onions. 8. Increase heat to 450 F, put dish in oven, and roast for an additional 8–10 minutes.
