DREAM, ADVENTURE, INTEGRITY: THE FUNDAMENTALS OF SABABAY WINERY WITH EVY GOZALI

Born and raised in Jakarta, Evy Gozali spent most of her academic period abroad; finishing her high school in Singapore and graduating from Cornell University of Ithaca as Master of Financial Engineering. In 2010, she and her mother, Mulyati Gozali decided to embrace a new opportunity in wine business and establish Sababay Winery in Bali. "The lesson I learnt the most in the last fewa years of growing Sababay Winery would be about the importance of sharing our passion, understanding the market and communicating through brand experience consistently" said Evy. "We value learning – together with our team, we focus on the fundamentals of brand building and putting the consumer at the heart of all we do" To build a locally-produce wine company in Indonesia is not an easy feat, since the climate and environment condition is really different from Europe-where its originally came from, and Evy understand this really well by addressing the fundamental differences. "We introduce Sababay Winery as New Latitude Chapter in Grape growing and Wine Making. explains Evy. "They are separated into 2 categories; High Latitude Wines which are produced in regions locate above the 50degrees latitude such as Denmark, Norway: and Low Latitude Wines which are produced in regions located bellow the 30degrees latitude such as Indonesia, Thailand, Vietnam and many other countries that have taken on the challenge of cultivating grapes under these new latitudes".

Being a wine enthusiast herself, Evy have passionately tasted various upscale brand all across the world, and she has no trouble pointing her most favorite Sababay Winery product. "I have so many favorites but the latest one that I am falling in love with is Mistelle – Vin de Liqueur Style from the grape of Muscat St. Vallier that are locally grown by the grape growers in North of Bali. The aroma just amazing – you will find Honey, White Flower, and Ginger. The Taste is delicately sweet and aromatics with honey and tropical fruit tastes such as pineapple & mango; which are further enhanced by vanilla undertones" she gleefully explains. "We launched Mistelle during pandemic time in 2020, dedicated to all woman for being ‘resilience and endurance” as well as for their ‘me time’ that they deserve" On its 12th year of journey, Sababay has successfully grow to become one of the most prolific local wine brands whilst at the same time giving back to local farmer community, and according to Evy, they will continue to do so for the foreseeable future. "Sababay is here to stay and grow. We started from a dream of empowering farmers and evolving Indonesia’s agriculture potentials; this will continue. We will keep on having great creative flair generating the right customers in Indonesia and internationally" said Evy. "In the next 5 years, I would like to see Sababay Winery and Sababay Distillery to be the top 10 leading beverage producers internationally, also as one of the top international Winery and Distillery destinations" she concluded

"We value learning – together with our team, we focus on the fundamentals of brand building and putting the consumer at the heart of all we do"

ESCAPE EXPERIENCE 33

It all started when Dimitri’s family was moved by the views when they first stepped foot on site, and to this day they don't get tired of enjoying the scenery, which they find reminiscent of the Balinese landscapes that they first encountered in 1996. The gentle river and stunning waterfall, juxtaposed with boundless rice fields in the backdrop present an authentic glimpse of Bali, a postcard perfect view of the island. Showcasing the lush landscape was a priority from day one so they designed the resort to ensure that almost all of the villas and suites offer unique views of waterfalls, rice fields or a stunning sunset over the ocean. At the end of the day, these natural features really are a key element of what makes Bali so special. The name Nirjhara, Sanskrit for waterfall, was chosen to echo the Balinese roots of the property, as the Balinese dialect was heavily influenced by Sanskrit and the latter is still used every day in Hindu ceremonies throughout the island.

Nirjhara was designed as a luxurious enclave set amidst verdant surroundings to foster a genuine connection between the ancestral Balinese culture, immaculate natural landscapes and discerning guests seeking a haven of peace and relaxation on the idyllic island of Bali. Founded by Dimitri Tran and Adrien Portier, this property is gaining more and more attention and love from the people coming to the island.

Merging contemporary architecture and modern comfort with authentic local influence, Nirjhara blends seamlessly into its environment. This eco-resort in Bali combines recycled wood, natural stones sourced throughout the archipelago, and traditional sirap roofing to create a sense of destination where travellers will feel utterly transported. There are 25 suites, and villas available, with Ambu (restaurant & bar), a 25m swimming pool, poolside dining gazebo, boutique, shop, library and private mini-cinema. The Retreat (spa, fitness centre, his & her saunas) and riverside yoga shala can be used by guests and, best of all, this place is pet friendly so you won’t have to leave your fur baby at home. Out of all the amenities, The Shala at Nirjhara really caught our attention. "It sits in a very unique location, bordered by a charming river, facing an imposing waterfall and a natural green wall connected to the rice paddies that surround the resort" explains Dimitri.

ESCAPE EXPERIENCE 35

In the end, they decided to keep the resort open throughout the pandemic, albeit with reduced working hours, in order to limit their expenses while also allowing members of the Nirjhara family to live a life of dignity despite the circumstances. Their management team has had to remain extremely flexible in order to maintain high standards in spite of the challenges and constraints. “Social distancing will probably leave its mark on society for years to come. It will have affected our way of life for so long that travellers will tend to favour more secluded, private destinations. We think that people will want to reconnect with nature after spending so much time indoors, working from home and avoiding public spaces. We will probably observe a phenomenon of dispersion where leisure travellers will value privacy and shun crowded locales for years to come” concludes Dimitri.

boat’s architecture will honour Indonesian craftsmanship, interiors will be spacious and bright, tastefully furnished with a selection of European fittings and fabrics. The boat was conceived for modern day adventurers and experiential travellers eager to explore the most remote corners of the Indonesian archipelago without compromising on comfort and refinement. For Vela, the duo partnered with an American naval architect, a Paris-based interior designer and an acclaimed Konjo shipwright in Sulawesi to create a unique product in line with the Nirjhara design ethos: merging authenticity and a clear sense of place with a contemporary approach to luxury and attention to detail. Speaking about the ongoing pandemic, the toughest challenge Nirjhara had to face throughout the pandemic was to make sound decisions to protect the business while also being compassionate and mindful with their team. "Closing down the resort would have been the smarter move financially speaking, but this would have implied letting the team down" says Dimitri.

"When conceptualizing the yoga pavilion, we promptly realized that dissociating the building's architecture from its immediate surroundings would be impossible. The direct proximity to nature really dictated the design we would have to adopt from the onset" While Nirjhara's overall architecture does not typically use bamboo – favouring other sustainable materials instead, bamboo felt like a logical choice for the beautiful yoga shala, thanks to its flexibility and ability to recreate organic curves found in nature. The owners opted to partner exclusively with Bali-based designers and architects such as Tonny Sadha for interiors, and IBUKU studio for the breathtaking yoga pavilion. The studio is known as a pioneer when it comes to bamboo architecture and is recognized internationally for its work in fields as varied as hospitality, charity and education, so partnering with them came naturally. Nirjhara is currently putting the finishing touches on Vela, a 50-meter phinisi sailing yacht set to launch in May 2021. Don’t expect your typical rustic phinisi: while the

ASUPERMODELTURNEDICONICHORRORMOVIESTAR, INDAHKALALO'S VIBRANT INFLUENCE AND BEAUTY HAS SPREAD THROUGHOUT INDONESIA. BUT NOW, EVER SINCE BECOMING A WIFE AND MOTHER OF THREE, SHE DECIDED TO SETTLE DOWN AND LIVING LIFE TO THE FULLEST WITH HER BELOVED ONES IN BALI, AS WELL AS BUILDING HER CAREER IN FASHION. HELLOBALI MANAGED TO CHAT WITH THE GORGEOUS LADY IN-BETWEEN HER BUSTLING ACTIVITIES.

Your last movie is on 2017. Any chance you'll be returning to the big screen anytime soon? Actually, my last movie was released in 2019, it's a horror movie called 'Kajeng Kliwon'. Since the pandemic I got several offers for work on movie, but I'm still deeply considering because most of the shooting must be done around Jakarta and takes two to four weeks to finish. As I said before: family is my first priority, so i don't want to stuck in Jakarta or any other places in the world without them, my husband and my children, so I guess I'll wait until the pandemic is over. For now, I just want to stay in Bali and just focus on my fashion line. What is the definition of 'strong woman' for you Strong woman is someone who able to adapt in any circumstances in life, willing to survive, work and being strong in every hardship that she might face in her life. She also has the capability to inspire the people around her, and have big empathy; not only focusing on herself, but doing good deed toward others.

First, because we love nature so much! Every day we get a lot of sun, sea, vitamin sea, our kids can go to the beach anytime, playing in the sand, watching the animals, getting close to nature, things that we couldn't get while living in Jakarta. The second things that makes me love Bali is because it drives you to be creative. There are so many talented local artisans here that we can find and collaborate to create beautiful art pieces, clothes, jewelry, bag, designing furniture, etc. The third one; people in Bali are super nice, very spiritual, the culture and art are also amazing. You only ask for three things, but I can give you a thousand! (Laugh), that's how much I love Bali. So many positive energy and good karma; I believe if you're doing good things, I feel that Bali really welcomes you back in a way. As a mom of three, wife, fashion designer and model, how did you balance between career and family? It's by prioritizing the most important one, and I think family should be the first one before career. During workdays, I only work for Je Suis Flirt during the time my children are in school. On the weekend, we all spend time together by travelling to many places and enjoying each other. Basically, I feel like I'm quite balanced in both career and family, and I'm just happy to make family my first priority.

Tell us a bit about 'Je'suis Flirt' boutique. What inspires you to start the fashion brand? Any plan / project in near future that we should anticipate? Fabiola and I started a show, fashion and party organizer in 2005 called FLIRT.Inc. We would make events in ballrooms, nightclubs in Indonesia, Singapore and Hongkong. I was inspired when I went to live in Ibiza and saw all the amazing shows and dancer with beautiful costumes. So, I decided to make events and partner up with Fabiola, who were a choreographer in 2005. From there, we worked together with designers in all of our events until we finally start creating our own costumes and clothes. People liked what we made and then finally one of our dear friends, Deli Makmur, asked us to join his company called Fashion First and we did a fashion show for Jakarta Fashion Week in 2010 and 2011. From there, Je Suis Flirt was born. In near future, Fabiola and I are thinking to open another boutique, hopefully soon, and we're going to do the second line of Je Suis Flirt. We also have a plan to have another boutique brand called 'Flirt Home', basically because Fabiola and I love to do art, design and also decorate homes. We have few up and coming projects, including designing our villa and our beach house at Ceningan island. What's the best thing you like about living in Bali? Name us three along with the reasons why!

AS ONE OF FEW INDONESIAN FEMALE WINE SOMMELIERS, JANISAA PRADJA LEWIS IS CERTAINLY A FORCE TO BE RECKONED WITH. DESPITE BEING THE WIFE OF NATIONAL ACTOR MIKE LEWIS, SHE OPTED FOR A DIFFERENT CAREER PATH—FAR FROM THE GLIMMERING SHINE OF CELEBRITY SPOTLIGHT. NOW SHE’S MAKING A NAME FOR HERSELF BY DOING WHAT SHE LOVES THE MOST. HELLOBALI SPOKE WITH THE ASPIRING LADY ABOUT HER PASSION OF WINE AND THINGS THAT SHE WOULD DO TO EMPOWER WOMEN ALL OVER THE GLOBE.

If you have the influence to change the world into a better place for women, what would you do (and why) Despite some progress made over the last few decades in increasing women’s labor force participation and narrowing gender gaps in wages, gender equality in the world of work still remains an elusive goal. Women are still challenged with difficulties every day in the workplace, being questioned with the judgmental perspective that their role should be filled by men. Carrying your duty as a woman is often made harder due to your gender. While millions of women have become successful entrepreneurs, women are still largely underrepresented in the world’s board rooms. In particular, in developing countries.Withmy profession as a sommelier, which for centuries has commonly been known to be a male’s profession, I hope to inspire other women to not just follow the stereotypical job opportunities that are considered to be an "ideal" job for a woman. I think with more and more women aspiring for higher opportunities and filling into these so-called "men's shoes" we can create more opportunities for women and the next generation. How do you want to be remembered? To quote Sidney Poitier "If I'm remembered for having done a few good things, and if my presence here has sparked some good energies, that's plenty."

years, sometimes decades to reach that sweet spot, and when you do reach that point it's not going to taste like your normal go-to 20$- 100$ bottle. So much maturity has happened to the wine in that time that I would say You need a mature palette to appreciate those flavors as well. “So much maturity has happened to the wine in that time that I would say You need a mature palette to appreciate those flavors as well” Could you explain a bit about your involvement in Bali Pink Ribbon? My involvement with Bali pink ribbon is due to the influence of my amazing mother. She is one of the founders of Bali pink ribbon which is a breast cancer awareness foundation. Since I was little, she has always brought me along to help and participate in their events. I was exposed to this cause at a young age, that as I grew a deeper care and understanding for this cause grew as well. I try my best to help support in any way I can. Breast cancer affects over 250,000 women annually and 42,000 women lose their lives to the disease. The amazing volunteers at Bali pink ribbon take time out of their day to educate on the prevention, diagnosis, and treatment of breast cancer. Spreading Awareness surrounding breast cancer is incredibly important as early detection can save lives.

Could you tell us a bit about your background; what profession did you aspire to be growing up? Growing up I don’t think I knew exactly what I wanted to be. I spent my whole life growing up in Bali and even being exposed to different career opportunities I still wasn’t quite sure. However, after graduating from high school I decided to take a gap year and spend a summer in the south of France. I wasn’t sure what I wanted to major in for uni anyway so why not escape to France. My time spent in the south of France allowed me to quickly learn and absorb the wine culture. I went to my first ever wine tasting and was in awe with everything from the growing to the making and of course to the drinking. I think being exposed to wine in such a wine driven county allowed me to really appreciate wine for what it is. After my trip, it felt like a miracle, turns out one of the universities I wanted to go to had a wine major. I knew it was a sign., so I did it! I spent 4 and a half years at California Polytechnic to get my bachelor of science in enology (winemaking) then after that I went on to peruse my WSET and then started training to become a sommelier. As a wine expert, what is the most commonmisconception about wine that you would like to tell to everyone? THE MORE EXPENSIVE THE WINE, THE BETTER IT TASTES. There were a lot of studies where people tend to think that expensive wine tastes better but there was a reason behind that, it's because they know it's expensive. Also, some very expensive wines or older vintages are a little harder to appreciate, not because you have a poor palette but because those wines are built differently. They are built to age and expensive bottles will taste very unbalanced if opened early and requires patience spanning
