Black Pudding, Diced Garlic Potatoes with Fried Egg INGREDIENTS 127280 Charles Macleod Stornoway Black Pudding (sliced & diced) - 1 10433 Baking Potatoes (diced) - 500g 10439 Garlic (crushed - 2 cloves 118090 Supernature Rapeseed Oil - 2 tsp 122385 Scottish Eggs (free range) - 4 113881 Flat parsley (shredded) - Bunch METHOD 1. Pre heat your oven to 200°C. 2. This is a very easy dish to make and is perfect for a Sunday brunch. The first thing you need to do is to dice the potato and place the potato into a frying pan and fry until golden and crisp. 3. Add the black pudding and cook until the pudding starts to crisp up, then add the crushed garlic and cook out for a couple of minutes. 4. The last thing to add is the shredded flat parsley. 5. Split this mixture into four oven proof dishes. 6. Lastly fry the egg. Either crack the egg and place directly onto the pan and bake in the oven, or shallow fry the egg and place on top. The secret to success when frying eggs is to not have the pan too hot when the egg goes into the pan. It shouldn't make any sound, and using your spatula flick the oil over the top of the egg, controlling the temperature as you go. 7. Try when cooking to keep the yolk runny.
