COLOUR When it comes to bone broth concentrates, the darker the colour, the higher the concentration of gelatin and collagen. Our broths contain less than 1% fat, which is why they are so rich in colour. We intentionally skim the fat from the surface during the slow cooking process, leaving a rich concentrate behind that is higher in collagen protein. NUTRITION PANEL How can you tell if a broth concentrate is derived from bone marrow or tallow (rendered fat)? Check the nutrition panel for the protein and fat content. If you’re looking for concentrated nutrition from bone marrow, where protein is higher and fat is lower, we’ve got you covered. TASTE Does your broth taste rich or does it have a fatty aftertaste? You can often tell quality from the taste alone. Our range has a strong umami flavour, showcasing the premium ingredients through a sensory experience. TEXTURE When it comes to broth concentrates, the stickier and more solid the better. Why? It means that the product is rich in gelatinous material and it tends to stick together and form a glue. This Chinese Crispy Chicken with Brothy Rice combines juicy chicken mince, fragrant spices, and the perfect balance of sweet and savoury notes from tamari, honey, and sesame oil. Method 1.
Cook rice to packet instructions.
500g chicken mince 2 tbsp olive oil 3 cloves garlic 3 Spring onions, finely sliced 3 tbsp grated ginger

In a pan, add olive oil and chicken mince. Cook until starting to brown then add garlic and spring onion and ½ of the ginger. Cook for another couple of minutes until the chicken is nicely browned and the garlic is softened. Add to the pan, Chinese five spice, apple cider vinegar, sesame oil, honey and tamari, cook for a couple of minutes until the sauce becomes sticky. Remove to a tray, keep warm. To the pan, add 1 ltr of hot water, remaining ginger and 2 tbsp chicken broth, stir until broth begins to simmer. Serve rice into bowls, pour over broth, then add chicken mince, then garnish with coriander.

Braised Beef Short Ribs With Cauliflower Mash

Rich, tender, and oh-so-comforting! This dish is everything you love about comfort food, with the added goodness of Beef Bone Broth Concentrate for some immunity and gut boosting. Paired with creamy cauliflower mash that’s a little lighter (but just as delicious) than traditional mashed potatoes, this dish is the perfect balance of rich flavour and wholesome goodness.

Method 1.
Preheat the oven to 160°C. Season the beef ribs with salt and pepper. Heat olive oil in a dutch oven. Sear the beef in two batches until golden brown on all sides, then transfer to a plate. Add the onion and garlic to the same pot. Cook for 4–5 minutes until softened and caramelised. Return the beef to the pot. Pour in the red wine, stir, and cook for a minute. Add tomato paste, beef broth concentrate, 3 cups of hot water, baby potatoes, carrots, and thyme. Cover and bake for 3 hours. After 2 hours, add 2 more cups of hot water and continue cooking for 1 hour. The beef should pull easily from the bone. Boil frozen cauliflower with 1 tbsp butter and milk for 10 minutes until soft. Transfer to a food processor with ¼ cup of the milk mixture, salt, and pepper. Blend until smooth. Check the consistency of the beef sauce, if it is too thin, remove the beef and simmer until reduced. Stir in 1 tbsp butter and season to taste. Divide the mash and stew into bowls and garnish with fresh thyme.

Method 1.
In a large pot, gently fry together the leek, carrots, celery, and garlic in olive oil until softened (about 8 mins). Add shredded chicken, broth concentrate, water, lemon juice and zest, pepper, parmesan cheese and simmer for 10 minutes. Add orzo and cream, cook for another 8 - 10 minutes. Taste and season, and add more water if the soup is too thick.

Slice across the steak grain into 5mm thick slices.
1 tbsp Beef Bone Broth Concentrate Turmeric Ginger 700g boneless rib eye steak 1 pear, peeled and chopped ¼ cup soy sauce 2 tbsp maple syrup 2 tbsp toasted sesame oil 3 cloves garlic, minced 1 tbsp freshly grated ginger 1 tbsp gochujang (preferably all natural) Olive oil 1 bunch of broccolini

In a blender, add pear, soy sauce, maple syrup, sesame oil, broth concentrate, garlic, ginger and gochujang, blend until pureed. In a container, add the sauce mixture and steak, making sure all the steak is covered with the sauce. Marinate for 2 hours or overnight. If you get stuck, 30 mins will do the trick.

Heat 1 tablespoon of olive oil in a pan over high heat. Cook broccoli for 3-4 minutes until tender. Set aside. In the same pan, add another tbsp of olive oil, then working in batches, add steak to the pan and cook, flipping once, until charred and cooked through, about 2-3 minutes per side. Repeat until all the steak is cooked, add the broccoli back into the pan to gently heat. Garnish with spring onions and toasted sesame seeds.

Preheat oven to 220 C

Add Chicken Bone Broth to a jug filled with 250 ml of boiling water, mix to combine.

Cut potatoes into 1 inch thick slices.

Press the heart cookie cutter into the potato to make the heart shapes (save the offcuts for a soup!). Pat dry with a paper towel. Add olive oil to an oven proof fry pan on medium heat, and cook until golden brown (3+ minutes) then turn the potatoes over to brown on the other side. Lower the heat if it looks like the pan is too hot at this point. Once golden on both sides, add in the garlic, lemon juice, butter, pepper and herbs, let it sizzle for a minute then add in the broth. Bake, uncovered for 20 minutes until creamy and cooked through. Check to make sure the potatoes are cooked through by inserting a knife and checking for tenderness.

Spread rice in a thin layer on a prepared baking sheet and roast for 30-40 minutes, turn the rice every 10 minutes. Allow to cool slightly Make the dressing by combining 1 tsp rice wine vinegar, 1 tsp maple syrup, 1 tbsp tamari, ½ cup Japanese mayonnaise and ½ tbsp sesame oil Add salad ingredients to a bowl with crispy rice and pour over dressing, toss to combine.

Low Carb Lasagna With Beef Bone Broth Concentrate

Instead of pasta, we layer in zucchini ribbons, making it rich in veggies and flavour but satisfyingly light. Stuffed with all your favourite cheeses and our special Beef Bone Broth Concentrate, it’s good for your guts and your energy levels. It’s the kind of meal that fills you up without weighing you down!

Method 1.
Preheat oven to 200°C.
1 tsp Beef Bone Broth Concentrate Natural 2 tbsp olive oil 1 onion, diced 3 cloves of garlic, diced 2 carrots, diced 3 sticks of celery, diced 500g beef mince 1 tsp salt

In a pan on medium heat, fry the onion, garlic, carrot and celery in olive oil for about 5 minutes, until softened slightly. Turn the heat up and add beef mince with ½ tsp salt and 1 tsp pepper, fry until browned about 5 minutes, stirring occasionally. Add passata, beef concentrate, thyme and milk, stir to combine and simmer for 10 minutes. While the sauce is simmering, mix together the ricotta, ½ cup parmesan, nutmeg and remaining salt and pepper. Set aside. To assemble, in a baking dish about 33 x 22 cm, drizzle olive oil, then layer zucchini ribbons so that they overlap covering the whole tray. Then spoon over ⅓ of the lasagna mixture, then dollop ⅓ of the ricotta mixture and spread carefully over the lasagna sauce (it doesn’t have to be perfectly covered). Repeat two more times to use up the remaining ingredients, ending up with the ricotta layer on top. Then sprinkle over mozzarella and parmesan.

1 tbsp Vegetable Broth Garden Veggie 1 lemon 400g fillet of salmon (or 2 x 200g fillets) Pinch of salt Pinch of pepper 1 tbsp honey ⅓ cup fresh chopped parsley

Line a baking tray/dish with slices of lemon. Place the salmon on top and season with salt, pepper, lemon juice and honey. Place in oven for 20 minutes (adjust depending on the size of your salmon steak). Mix all the salsa ingredients together and bowl.
