Baked Salmon With Vegetable Broth

Ingredients
Method 1.
Preheat oven to 160°C.
1 tbsp Vegetable Broth Garden Veggie 1 lemon 400g fillet of salmon (or 2 x 200g fillets) Pinch of salt Pinch of pepper 1 tbsp honey ⅓ cup fresh chopped parsley

Line a baking tray/dish with slices of lemon. Place the salmon on top and season with salt, pepper, lemon juice and honey. Place in oven for 20 minutes (adjust depending on the size of your salmon steak). Mix all the salsa ingredients together and bowl.

¼ cup minced red onion ⅓ cup dried cranberries ¼ cup toasted pine nuts Teaspoon of lemon zest 2 tbsp olive oil Juice of half a lemon 1 tbsp fresh dill 1 tsp honey

Serve salmon with salsa on top.
