FAMILY IS ALL YOU NEED FOR THANKSGIVING It Doesn’t Matter Where You Are or What You Eat!
While my family’s Thanksgivings are fairly traditional, it’s really up in the air as to where exactly we’ll be when cutting into the turkey! While most of my extended family members are right here in Illinois, Emilie’s are scattered all over. We try to take turns visiting each side of the family for Thanksgiving to make sure we get to see everyone as often as we can. However, this does make for some travel and last-minute changes! This year, Zach will be celebrating his first Thanksgiving as a college student, and while we thought he’d come home to visit, he might actually have something else up his sleeve. Because he’s part of the university’s choir, he’s set to perform at Disney World in Florida! We were supposed to stay
in Illinois this year with my family, but heading to Florida may be in the works instead. I’ll be honest: Despite the holiday coming closer, we’re still undecided. We may just stay home for the celebrations, then fly to Florida the next day or have Zach fly over to us. Who knows, maybe we can see Zach a bit earlier for Thanksgiving? Whatever we do, I know we’ll have an incredible time together like always. We’ve always been flexible about our Thanksgiving festivities. Our younger son, Nathan, once had a hockey tournament out of town that had us celebrating on a tight schedule. The four of us were eating turkey at 10 a.m. so we could hit the road to make it to Nashville for his hockey tournament the next day! Pretty early for a Thanksgiving feast, I know, but it was still such a memorable family moment for us. For me, as long as I have my family and staples like turkey, stuffing, and mashed potatoes with gravy, I am just fine. Emilie has never been the biggest fan of turkey, and my kids have their own preferences, but if nobody wanted these three Thanksgiving
essentials, I’d go ahead and make them myself! Besides the delicious and comforting foods, Thanksgiving is one of my favorite holidays because I get to spend time with my family and see my nieces and nephews, who are also away for college. I think the older you get, the more you appreciate Thanksgiving and the gratitude you have for those around you. I’m thankful for my family and to have my sons so close, even if Zach is in college. Since his university isn’t too far away, we get to see him every two weeks! I’m also grateful for this time with Nathan before he gets ready for college. I’m thankful for my wife, who cares for every single one of us. Stuffed Pepper Soup
Stuffed bell peppers are a common meal in many households. And as temperatures begin to drop, there’s no better way to warm up than by turning this classic recipe into a hearty — and healthy — soup!
INGREDIENTS • 2 lbs ground beef • 6 cups water
• 1 28-oz can tomato sauce • 1 28-oz can diced tomatoes, undrained • 2 cups chopped green peppers • 1/4 cup packed brown sugar
• 2 tsp salt • 2 tsp beef bouillon granules • 1 tsp black pepper • 2 cups cooked long-grain rice • Chopped fresh parsley (optional)
DIRECTIONS 1. In a Dutch oven over medium heat, cook beef until no longer pink, breaking it into crumbles; drain. Add beef back to the pot and stir in all ingredients except the cooked rice. Bring to a boil. 2. Reduce heat. Simmer uncovered until peppers are tender, about 30 minutes. 3. Add cooked rice and simmer, uncovered, for about 10 minutes. If desired, sprinkle with chopped fresh parsley.
