Add Some Swirl to Your Holiday Table with Potica, a Recipe from Relish By Brittany Shrimpton

"That's the cool thing about recipes from the Iron Rage," says food blogger and fellow Eveleth native Ashley Leonard. "A lot of the Iron Range recipes are more "Iron Range" recipes than a specific nationality. It's just the melting pot of the Iron Range, and everyone there makes those recipes and enjoys them and shares them with everyone else." Throughout the 1900s, groups of (mainly) women would gather on the Iron Range to bake potica together. Unofficially, but affectionately, these women were known as "the potica ladies." When Kelly and Leonard both found themselves in the Twin Cities area in adulthood, they decided to team up for an annual potica bake. "It's always more fun to make it with two people and it's a bit labor intensive," admits Leonard. Kneading the dough until it has the perfect elastic finish, ensuring it doesn't tear when it's rolled out to its thinnest extreme, and hoping beyond hope it doesn't stick to the surface when rolling it up are a few of the tricks that come with time and experience. Even though making potica is a little laborious, the two cherish the tradition. "It's so delicious that I would put in twice as much work," says Kelly.

"Potica is a sweet bread," explains Samantha Kelly, a recipe developer and Eveleth, Minn., native. "You roll enriched dough out tissue-paper thin. Then spread it with a walnut-honey-cream mixture. And then you just roll it, bake it and slice it. It's so delicious!" Nut rolls like potica (pronounced "pah-TEET-sah") originated in Eastern and Central Europe. Derived from the Slovenian word "poviti," which means "to wrap in," potica was so important in Slovenian culture that it made an appearance in the first book printed in the Slovenian language in the 16th Century. Fillings ranged from sweet to savory and often denoted one's social class. The wealthier classes used walnuts and cream, while lower socioeconomic classes used herbed fillings. Though recipes are endless today, walnuts and cream continue to be the most popular choice, at least on the Iron Range. Potica was introduced to Minnesota's Iron Range in the early 1900s as many immigrant populations moved to the area to work in the region's bustling mining industry - but it was the Slovenian and Croatian immigrants who brought with them this delicious slice of home. The recipe spread and is now a staple on many Christmas and Easter tables in Iron Range homes, whether or not they have Eastern or Central European heritage.

WALNUT POTICA RECIPE By Samantha Kelly and Ashley Leonard

DOUGH • 2 envelopes dry active yeast • ¼ cup warm water • 1 cup milk • ½ cup butter • ¼ cup sugar • 1 teaspoon salt • 3 large eggs, beaten • 5 cups flour (+ extra if needed)

1. Combine walnuts, sugar, brown sugar and butter in large bowl, set aside. 2. Heat cream and honey is small saucepan over medium heat, stirring constantly, until steaming and bubbling around edges. Pour over walnut mixture and stir to combine. Add eggs and vanilla, beat well.

ASSEMBLY 1. Heat oven to 350°F.

2. Roll dough on floured cloth as thin as you can possible get it, should be basically see-through, to a large rectangle approximately 36x60 inches. 3. Warm filling if completely cooled (will be easier to spread). 4. Spread filling in thin, even layer over rolled dough, extending all the way to the edges. 5. Tightly roll dough, starting on long edge, like a jelly roll. Pinch edge to seal. Cut into 5 loaves, approximately 12-inches in length. (Loaves do not get a second rise) 6. Melt 1 ½ tablespoons butter in 9x13 pan. Roll cut loaves in butter to coat. 7. Baked at 350°F for 15 minutes. Reduce oven temperature to 325°F (without opening oven) and continue baking 45-1 hour until loaves are a deep golden brown. Let cool before cutting. Cooled loaves freeze extremely well.

1. Combine yeast and warm water in small bowl, let sit 5-10 minutes until bubbling and foamy. 2. Heat milk until small bubbles form around edge and is steaming. Stir in butter, sugar and salt until dissolved. Let cool. 3. Once milk mixture is cool add yeast mixture and eggs, stir until well combined. 4. In large bowl add flour and cooled milk mixture. Stir until well combined. 5. Turn out onto floured board and knead about 10 minutes to incorporate all flour until dough is smooth & elastic. Add more flour as needed if dough is too sticky to handle. 6. Grease clean, large bowl with butter, cover with damp cloth and let rise in warm place about 90 minutes or until at least doubled in size.

Deck the Halls with Bright, Shiny, Aluminum Objects By Brendan Henehan

On December 19, 1965, my grandmother Margaret Killian Marin scribbled a short entry in her diary. It stated that her husband, Ernie, had put up a four- foot aluminum Christmas tree. My sister remembers that the tree held court in a space my grandparents grandly called “The River Room” that overlooked a bend in the river that ran through Belding, Michigan. My grandparents’ simple action came at a critical moment in the history of aluminum trees: Just 10 days earlier, a low-cost, animated, holiday TV special had stunned its producers by being an instant hit. A Charlie Brown Christmas captured 15 million viewers, and an annual tradition was born. Lovers of aluminum Christmas trees could not help but notice that, in the special, Charlie Brown had loudly dismissed a shiny, aluminum tree, choosing to buy a forlorn live fir instead. The aluminum Christmas tree industry never recovered from that prime-time rejection. But I think my grandparents made a fine choice back in 1965. And the 7-year-old version of me was clearly smitten with the color wheel spinning under that shining four-foot tree in their humble River Room.

Fast Forward to 1998. Young Brendan was now middle-aged Brendan and the producer of Almanac , a long-time Friday night public TV show in the Twin Cities. Almanac host Cathy Wurzer kept telling me about the wonders of her grandparents’ six-foot Evergleam aluminum Christmas tree. The Steele Family Singers were going to perform holiday tunes on our show that week, so she volunteered to bring in the tree and use it as part of the set. I agreed, and the combination of the Steeles and shiny trees became an annual Almanac tradition. Don’t get me wrong. I love live Christmas trees. I buy one every year. But there’s something all space-agey and majestic about a twirling, shining aluminum tree. So I started looking for one to buy. Luckily, the metal tree market in the late 90s was still a bit soft. I found a seven-foot aluminum Evergleam-brand tree at an antique store in Stillwater, and I remember calling my spouse asking if it was okay to spend 50 bucks on it. She said sure. So I brought it home. I soon saw a two-foot Evergleam going for $15 at another antique store. I had to have that one, too.

In subsequent years, I entered a stage where some thought intervention might be needed. I hopped on the new-fangled auction site Ebay and discovered that the aluminum tree supply often exceeded demand around the holidays. I started putting in $9.95 minimum bids and each year I’d score a few more trees. I have great fun with them during the holidays. Several are dedicated to the Almanac set each December. The Henehans usually put up a half dozen trees (short, tall, some hanging from a wall) at our home each year. We decorate them with vintage mid-century glass bulbs. They look fabulous.

And just to please Charlie Brown, my family also puts up a live tree.

I like to think that the great 1965 live-versus-aluminum tree controversy has ended. That my grandparents and Charlie Brown were both right.

"Hon, should we add leaves to the dining room table so everyone can sit together? Or set up a kids' table?"

"Let's have everyone sit together. When the kids are older, they can have their own table."

I picture those childhood holiday gatherings as if the flash bulbs had just popped, lighting up those familiar faces: my grandparents, parents, aunts, uncles and us kids — my sister, me and our cousins. In those black and white images, I can tell which holiday we're celebrating by the dishes that Grandma and Mom, Aunt Ellie and Aunt Jo fixed. Over time, the grown-ups in those photos grew older and the kids bigger — becoming teens, then grown-ups themselves, then parents with tots in tow — in what seems now like no time at all. Did my gray-haired, bespectacled grandparents see then that there would be fewer chairs around the table before long? Did that thought cross my parents' minds? As a child, it never pierced my today-is-the-only-day awareness. Other pictures followed – in Kodachrome color – of gatherings in suburban homes, with Dad at the head of the table, Mom preparing the meal or my uncles and aunts doing the same at their houses. For a while, grandparents with faded eyes blinked in the camera's flash along with new faces: first newlywed spouses, then babies in highchairs, toddlers in booster seats. For years, we regrouped to celebrate holidays. But when the glint of braces marked teenage smiles, Grandma, then Grandpa, no longer graced our table.

Then Daddy died. Suddenly, in his prime. Soon, Mom sold our family home and moved to the city. Before long, our Thanksgiving photos captured her second wedding, One unforgettable day, Mom moved to Florida with her newly retired husband. My generation — my sister Julie, my cousin and best friend Lynn, and I — married and moved away, each to different destinations. After that, our children rarely saw their cousins. On holidays we'd get together, not with family, but with friends and neighbors.

But did we make new memories for our children? Create our own traditions? Yes.

In a flash, it was the children who welcomed us to their holiday tables, with our grandchildren first in highchairs, then boosters, then cushions on their chairs, then no cushions needed.

What Do Ethics Have to Do with the Price of Eggs? By Jennie L. Phipps

Inflation worries everyone, but no aspect of it has caused as much consternation as skyrocketing egg prices. Some egg prices have gone back down since the start of the year. Discount supermarkets are routinely selling a dozen white eggs for less than $2. But sharing shelf space are cartons of eggs that can cost as much as $10 a dozen.

For eggs to be labeled "organic," they must be given feeds from certified organic production facilities that do not use pesticides, insecticides or any other chemicals. "That makes the feed ingredients four times as expensive as regular corn or regular soybean meal," Anderson says. "When they're fed to a chicken, the eggs are going to be about four times more expensive. That's where you get $8 a dozen for an organic egg."

These eggs claim to be "cage-free," "free- roaming," "pasteurized," "organic" and "natural."

Here's what you are really paying for when you buy eggs with these common descriptions.

Is it worth paying twice, three times, even four times as much for an egg that has a healthy- sounding label? Some say, yes. But are boutique eggs healthier? Nutritionally, the answer is, "no," says Kenneth E. Anderson, professor of poultry science at North Carolina State University. "Provided that a hen is fed the same nutrients, you end up with an egg that is nutritionally equivalent to any other egg."

• Brown eggs . "If it's a white bird, it lays white eggs. If it's a brown bird, it lays brown eggs," Anderson says. Brown and white eggs are nutritionally identical. • Cage-Free . Hens aren't kept in cages, but they are indoors, often in crowded conditions. • Free-Range . These hens aren't kept in cages and have a varying amount of room to run. If the carton has a "Certified Humane" or "American Humane Certified" label, birds have a relatively spacious outdoor run. • Hormone-Free . By U.S. law, all hens used for eggs or meat cannot be given hormones, so "hormone-free" doesn't make these eggs unique. • Pasture-Raised . This label is not regulated by the U.S. Department of Agriculture. Humane Farm Animal Care, a non-profit organization, coined the term, which is now used by similar animal-rights organizations.
