SHŌCHŪ Shōchū is a Japanese spirit that can be distilled from either rice, barley, sweet potato, sugar or buckwheat. It’s lower in alcohol, 25-35%, than most other spirits with an earthy and savoury flavour. It is consumed straight up, on the rocks or as a mixer. Popular in Japan is the chūhai, a shōchū highball mixing the spirit with ice, soda and flavouring such as apple and lemon.
