Foodborne illness results from the growth of harmful pathogens on food that remains between 41˚ and 135˚ F, otherwise known as the danger zone. Food items that have been in the danger zone for four hours or longer should be discarded immediately.
The FDA recommends that food be cooled from 135˚ to 70˚ F in two hours and from 135˚ to 41˚ F in no more than six total hours.
