A s I sat down to write this note, I glanced out the window to see the beautifully lit bridges and lake beginning to freeze over. A sight I haven’t seen in years. It instantly brought back memories of childhood, bundling up and heading out with friends to ice skate until our cheeks were red and our toes were numb. Just a few days ago, our own children raced home from school, thrilled by a light dusting of snow, and spent the afternoon sledding “the bowl” until it was dark. The magic of winter in Spring Lake continues to connect generations with its charm and beauty. Moments like these remind us of how deeply grateful we are to call this special place home. We are thrilled to introduce residents to The Kindness Café and the incredible team bringing its vision to life. Now located in the Manasquan Bank branch in Spring Lake Heights, the café has reopened in its new home. We’re excited to share the story of how Manasquan Bank and The Kindness Café team collaborated to expand their shared commitment to supporting individuals with diverse abilities and enriching the broader community. TIPS FOR STARTING YOUR OWN SOURDOUGH JOURNEY 1. Commit to Your Starter: Begin with equal parts water and flour. Stir it daily and feed it regularly until it’s bubbly and active. It may take 5-7 days for your starter to come alive. Patience is key. 2. Name Your Starter: Whether it’s “Howerdough” or “Flourence,” naming your starter makes it fun. It also motivates you to keep it alive, much like you’d care for a houseplant or pet. 3. Learn the Art of Timing: Sourdough baking isn’t about instant gratification. The full process takes 24-48 hours. Plan accordingly and embrace the wait. 4. Experiment with Recipes: Once your starter is active, try different recipes. From classic sourdough loaves to loaves with inclusions and even sourdough bagels and Ciabatta rolls, each bake will teach you something new. 5. Don’t Fear Mistakes: Sourdough is forgiving. A less-than- perfect loaf is still delicious and a stepping stone toward mastery. THE THERAPEUTIC NATURE OF SOURDOUGH There’s something meditative about the sourdough process. Mixing the dough, stretching and folding it, and watching it rise feels like a return to simpler times. For me, working with Howie has been a stress reliever and a way to focus my energy on something tangible and rewarding. My sourdough journey wasn’t just about creating delicious bread. I was drawn to the health benefits as well. Sourdough is easier to digest because its long fermentation process breaks down gluten and releases nutrients. It’s also rich in natural probiotics, which promote a healthy gut. Switching to sourdough has been a positive change for my family’s overall well-being, and knowing I’m feeding them something wholesome makes the effort worthwhile. SHARING THE LOVE (OF BREAD) The first time I baked a loaf that came out just right, my family’s reaction made me realize how much joy something as simple as bread could bring. From that moment, I knew I wanted to share this experience, whether it was gifting a loaf or encouraging someone to start their own sourdough journey. Currently, I share my bread through a mix of Instagram and personal connections. Once a week, I post a link on my Instagram @ecapone4 for pre-orders, making it easy for anyone to request a loaf. For now, I deliver locally, ensuring the bread arrives fresh and ready to enjoy. EMBARKING ON A SOURDOUGH JOURNEY is more than just learning to bake bread; it’s an experience that nourishes the soul, teaches patience, and brings a deep sense of fulfillment. My adventure began not just out of culinary curiosity but as a step toward better health. With health benefits such as a lower glycemic index, gut-friendly probiotics, and natural ingredients, I decided it was time to bring this ancient practice into my modern kitchen. Little did I know, my journey would involve more than just flour and water. It would also include a new kitchen companion: Howerdough, aka Howie, my sourdough starter. Naming your starter might sound silly at first, but it adds a layer of connection and fun to the process,
making it feel more like nurturing a pet than maintaining a baking ingredient.
THE IMPORTANCE OF THE STARTER: YOUR BREAD’S HEART AND SOUL The starter is the cornerstone of sourdough baking. It’s a living, bubbling mix of flour and water that serves as the natural leavening agent for your bread. Unlike commercial yeast, which is instant and predictable, a starter evolves over time, reflecting your care and the environment it lives in. Howie and I have been through a lot. The legacy of Spring Lake’s boardwalk A Stroll Through History
Administration, a New Deal Program created thanks to former President Franklin Delano Roosevelt. The Works Progress Administration was created to put public workers back to work after the Great Depression until the economy recovered. The project to build the Spring Lake Boardwalk was introduced to provide jobs to the growing population of Spring Lake and surrounding areas throughout New Jersey. The WPA began the project in the late 1930s and finished in the early 1940s. The boardwalk was built to be 2.2 miles long stretching all the way from South Boulevard to Brown Avenue. Since the day the project was completed, the boardwalk has acted as a haven for many. A place to relax, reflect, and just enjoy all that the wonderful town of Spring Lake has to offer. When Hurricane Sandy hit it devastated the boardwalk and there was uncertainty if the pilings would stay or go as it was obvious the entire boardwalk would need to be rebuilt. Thankfully, Spring Lake’s very own dedicated DPW crew was ready for the task to rebuild and when they rebuilt it they incorporated the WPA pilings into the new structure. They remain a reminder of how President Roosevelt and his contributions to bettering the United States directly influenced the Irish Riviera. Today the boardwalk continues to be one of the most popular places in Spring Lake. Without former President Franklin Delano Roosevelt people would not have a place to train for the annual Spring Lake 5, run for the 9/11 Memorial run, or enjoy their daily rituals Strolling the boards. Almost 100 years old, the boardwalk provides historical

W hen describing Spring Lake to those who have never had the pleasure to visit, I always mention the boardwalk. The place where thousands of footsteps can be traced daily no matter the season. The place that brings people together no matter the occasion through running, walking, or biking. And the place that can always help clear your head with the beautiful view of the Atlantic. Spring Lake’s boardwalk holds the distinction of being the longest uninterrupted, noncommercial boardwalk in New Jersey. Nestled between Belmar to the north and Sea Girt to the south—both boasting their own picturesque boardwalks—it offers walkers, joggers, and runners miles of breathtaking ocean views. Along the boardwalk, each of the pillars is engraved with “WPA.” The engraving stands for Workers Progress

significance to Spring Lake because it is one of the only
federally funded projects that has been accomplished in the town. The boardwalk is a treasure and will continue to draw people back to Spring Lake well into the future.

LOOKING AHEAD: GOALS FOR THE FUTURE As Ellery looks to the future, she remains focused on improving her skills. “There is no such thing as perfection, so I’m always working for more!” She shares. Her ultimate goal is to become a dancer with the New York City Ballet, a dream she has held since watching On Pointe all those years ago. ADVICE FOR ASPIRING DANCERS Ellery’s advice to other young dancers who dream of following in her footsteps is simple but powerful: “Work really hard at what you love, hard work pays off!” Ellery Jarmon’s story is one of passion, hard work, and dedication. As she continues to dance her way through her teenage years, her future in ballet is as bright as ever. With her sights set on the New York City Ballet, there’s no telling just how far this rising star will go.

E llery Jarmon’s journey into the world of dance began at an age when most children are just learning to walk. Today, she continues to pursue her passion with dedication, grace, and an unwavering commitment to her craft. From a young age, she has dreamed of becoming a professional dancer with the New York City Ballet (NYCB), and her hard work is beginning to pay off. DISCOVERING HER LOVE FOR DANCE It wasn’t until second grade that Ellery decided to take her passion to the next level. It was the documentary, On Pointe, about the School of American Ballet (SAB), that made Ellery realize she wanted to pursue ballet as a career. “Everyone looked like they were having so much fun, and they were all amazing dancers,” she recalls. From that moment on, her dream of joining SAB and one day becoming a professional ballerina with the NYCB took root.

What Ellery loves most about dance is the challenge. She thrives on pushing herself to achieve her goals. “I love being challenged and working towards my goals,” she explains. For Ellery, dancing is not just about performance—it’s about personal growth and overcoming obstacles. THE DREAM COME TRUE: JOINING THE NUTCRACKER AT NYCB One of the defining moments of Ellery’s young dance career came when she had the opportunity to perform in the Nutcracker with the NYCB. “I was overjoyed when I found out I was cast in the Nutcracker,” Ellery shares. “It was a complete dream come true.” Being able to perform on stage at Lincoln Center, alongside some of the best dancers in the world, was an experience she would never forget.
Ellery’s role in The Nutcracker was a Hoop, part of a festive and energetic dance featuring dancers holding wooden hula hoops that resembled candy canes. Preparing for the Nutcracker season was both exciting and demanding. A typical day would begin with school in the morning, followed by ballet classes at the School of American Ballet in the afternoon. In between rehearsals, Ellery would balance homework and food breaks, before heading over to the theater with her friends for the evening performances. The experience was filled with memorable moments, particularly when Ellery got to perform alongside some of her idols, such as Tiler Peck and Ruby Lister. “Every performance was very exciting,” she says, recalling those special moments when her favorite ballerinas were on stage.

neuro diverse backgrounds working in restaurants. She expresses the affect the segment had on her, “While watching the interviews, I was blown away. It was clear the experience had such an impact on not just the students but all of the employees and patrons. I went back to work teaching in the fall, but I couldn’t shake the idea especially as I was working with my students. I wanted to create something similar for our own community.” The Kindness Café collaborated first with the Center for Learning and Independence run out of Manasquan High School. This program, which was run at the time by Jen Dyer, assists neurodivergent children after they turn 18. Today, the café continues to be run every Monday by the students. FROM POP-UP TO PERMANENT Then, in the fall of 2022, the café opened a pop-up store out of Main Street Kitchen. The popularity for the café grew, and Rice knew that the growth meant the cafe needed its own space. Through grants and support from Manasquan Bank, the non-profit organization has had the opportunity to flourish in its new space. The response since The Kindness Café’s opening has been extremely positive. The café provides a welcoming space to get a coffee while running errands at the bank. The convenience of the café, as

Cafe had a vision to create a space for neurodivergent individuals to be meaningfully employed and create a space that is enjoyable for the employees and customers alike. Manasquan Bank is known for their commitment to supporting programs that enrich our community. At one of the Manasquan Bank Charitable Foundation’s grant breakfasts, the need for relocation of The Kindness Cafe was presented by Chrissy Rice and her board. Manasquan Bank had available space at their Spring Lake office, and decided to use the opportunity to create some real change. INSPIRATION SPARKS A MOVEMENT Chrissy Rice was originally inspired by a 2021 segment on the “Today Show” that highlighted students with
