Nelson, Marketing & Events Coordinator Luna Community College proudly took part in two holiday light parades this December, celebrating the season alongside the communities we serve and reinforcing our commitment to connection, visibility, and community pride. On December 6, Luna participated in the Las Vegas, New Mexico Light Parade. A huge thanks to our college representatives who helped spread the Luna spirit and holiday cheer with local families and spectators throughout the evening. Luna also joined the Santa Rosa Christmas Parade on Saturday, December 13. Our After School Program Teacher led the Rough Rider Mentorship students in a festive and well-supported parade entry. The group included ten students, one teacher, and four parents—two driving the truck, one portraying Santa, and one assisting with safety on the trailer—working together to ensure a safe and joyful experience for everyone involved. Participating in these events reflects Luna Community College’s dedication to showing up for the communities we serve, supporting our students beyond the classroom, and celebrating the traditions that bring our region together during the holiday season.

Directions:
1. Season shrimp with lemon pepper 2. Set skillet to medium-high heat 3. Melt butter or coat pan with olive oil 4. arrange the shrimp in pan laying flat on one side 5. Cook for 3-4 minutes on each side or until shrimp is done (when it turns opaque pink/white) 6. Arrange a bed of salad greens and top with cucumbers, cherry tomatoes, shrimp, sunflower seeds, feta cheese, and finish with a drizzle of lemon basil vinaigrette salad dressing.
