It’s not uncommon for us to answer phone calls from panicked people sitting in freezing homes or sweltering offices. It gives us an opportunity to swoop in like superheroes, armed with our utility belts and ready to save the day. The relief we see on people’s faces as we explain what we were able to fix is thanks enough. Then we move on to the next emergency we’ve been called to, thwarting local temperature crises one HVAC system at a time. But sometimes, even with the best intentions, our HVAC-saving procedures don’t work. The second panicked call from the same customer in one week is never one you want to receive, but I’d be lying if I said it never happens. Often, we walk into a tense environment, as our client is understandably frustrated. This even happens when the complications are beyond our control and stem from a source we couldn’t possibly pinpoint — which is often the case when we get that second call. However, our technicians are also human. Mistakes are bound to happen, and no matter how knowledgeable someone is, they are not immune to missing something. Thankfully, we have loyal clients who understand human tendencies and also know that HVAC systems, like any other piece of technology, can be prone to failure, even when we’ve done all we can. The Mid-Hudson Valley is a great place to do business because it’s full of people who understand that some things are just out of our control. Technology is unpredictable, and it is extremely frustrating, as a business owner, to not be able to fix the problem every time. But I’m also very grateful for the team I have supporting me. Sure, I may have a biased vantage point, but there’s no way I’d want someone who is subpar at their job representing me and tending to your home. Everything bagels are the most popular bagel flavor (well, they tie with plain for first place). Sprinkle this everything seasoning on popcorn for a delicious snack that will have people asking, “What does this remind me of?”

INGREDIENTS

• 2 teaspoons granulated onion • 3/4 cup popcorn kernels • 1/3 cup canola oil • 4 tablespoons unsalted butter, melted

• 2 teaspoons white sesame seeds • 1 teaspoon black sesame seeds • 2 tablespoons flaky sea salt • 2 teaspoons granulated garlic

DIRECTIONS 1. In a small skillet over medium heat, toast sesame seeds. Shake skillet often and cook until white seeds are golden and fragrant, about 2 minutes. Transfer to a small bowl and add salt, garlic, and onion. 2. In a large saucepan, combine kernels and oil. Cook over medium-high heat, covered, until kernels start to pop. Once popping, continue cooking and shaking the pan intermittently until popping ceases, 3–5 minutes. 3. Transfer popcorn to a large mixing bowl. Pour in butter and toss to coat. Finally, add seasoning, toss again, and serve.

If you’ve never been but have always wanted to know what it’s like to get out on the wind and waves, there are many great options available for beginners. Here are some ideas to inspire your next waterside vacation. Start Small For those who dream of becoming a skipper one day, a great way to start is by sailing dinghies. These one-sail, beach-launch boats fit 1–2 people and can be rented at most water sports shops. If you want to make it a family experience, shops usually have 16-foot catamarans for rent as well. Catamarans have two hulls rather than one, making for a smoother, more spacious ride. If you’ve never sailed before, inquire about lessons.
