Apple Berry Crisp for Two (2 Servings)
INGREDIENTS For Filling: 1 apple, cored and sliced
For the Topping: ¼ cup rolled oats ¼ cup whole wheat flour, oat flour, or gluten free flour 1 Tbsp. dark brown sugar or coconut sugar 2 Tbsp. butter or coconut oil 1 tsp. cinnamon 1 tsp. vanilla extract 1-2 tsp. pecans, finely chopped (optional)
�⁄3 cup blueberries �⁄3 cup raspberries �⁄3 cup blackberries 1 fig or date pitted and diced small ½ tsp. lemon juice 1 ½ tsp. arrowroot or cornstarch
INSTRUCTIONS 1. Preheat oven to 375°F.
2. Combine the apples, berries, and dates or figs with the rest of the filling ingredients and place into a small loaf pan or pot pie deep dish (for larger pan double recipe). 3. Combine the flour, oats, brown sugar, cinnamon, vanilla extract, and nuts if using, in a mixing bowl. 4. Add the butter to the dry ingredients. Stir to combine. 5. Using your fingers, sprinkle the crumble topping evenly on top of the apple mixture. 6. Bake for 35 – 40 minutes, or until the inside is cooked, and the top is golden brown and juices are bubbling. Feel free to add any fruit, fresh or frozen, to this recipe. This fruit-based dessert can be a blood-sugar friendly option as it contains little added sugar and includes antioxidants and some healthy fats. NutritionNotes
