Caribbean Saltfish (4 – 6 Servings)

INGREDIENTS 1 small red onion, diced 2 green bell peppers, sliced 1 Tbsp olive oil 1 Tbsp. crushed garlic ¼ cup pitted green olives 1 Tbsp. tomato paste 1 cup tomato, diced 1 cup tomato sauce 1 cup water

¼ tsp. ground oregano ½ tsp. onion powder ½ tsp. cumin 2 Ib. unsalted cod fish, boiled and flaked fresh (or frozen) 1 Ib. fully cooked potatoes peeled and diced 2 Tbsp. fresh cilantro, chopped

INSTRUCTIONS 1. Place fish in a stock pot, and fill with enough water to cover. 2. Cook until water comes to a boil, and then reduce to a simmer. 3. Continue to simmer until fish is fully cooked, and easily flakes with a fork. 4. Drain, and gently flake fish with a fork until its broken up into small bite-sized pieces. 5. In a pot heat the oil over medium-low heat. 6. Cook and stir the onion and peppers for about 2 minutes. 7. Add garlic, olives ,and tomato paste and cook for an additional 2 minutes, until they are heated through. 8. Pour in diced tomato, tomato sauce, and water, mix to combine. 9. Add oregano, onion powder, and cumin and mix. 10. Add flaked fish and potatoes, and gently mix to cover with sauce. 11. Lower the heat, cover, and simmer until the sauce has thickened (5 minutes).

12. Add in fresh cilantro. 13. Serve with brown rice.
