Valencia has been conquered numerous times over the centuries, having fallen into the hands of different cultures: Roman, Muslim, Christian. This traditional Spanish dish was first created in the Valencia region during the mid-19th century. Named after the specific shallow pan in which it is pre - pared, it consists of white rice, green vegetables, meat (either rabbit, chicken or duck), snails, beans and herbs and spices. Seafood can be used as an al- ternative to meat. Rice forms the ba- se of the dish, combining perfectly with the other ingredients, but it is the es- sential addition of saffron and olive oil that makes the difference. This speciality wasn’t previously prepared in an oven, but rather was cooked outdoors, over an open fire that provides a fresh, smoky aroma. The dish gained such popularity over time that it eventually became a festive spe- ciality, with paella fairs held in all ci- ties. The tradition of serving paella on Sundays has also remained in many Spa- nish provinces. The Spanish claim that at least 300 different recipes for this national dish can be found across the territory of the country, each of which serves as an exceptionally tasty meal.
