Drysdale Centre of Excellence FEATURE Teachers Industry Best

Drysdale Butchery teacher, Darren Scott has been named VET Teacher/Trainer of the Year at the 2019 Tasmanian Training Awards. Drysdale Centre of Excellence is the industry leader and training provider for all areas of tourism and hospitality in Tasmania. Drysdale prides itself on the quality of its teaching staff, and that the teachers are industry leaders in their vocation. One of the reasons behind Drysdale’s success is the calibre of staff, like Darren. Darren has worked in the meat industry for more than 36 years and has been a butchery teacher at Drysdale for 13 years, training a large number of butchery apprentices. He takes a personalised approach to training, developing training methods to suit a range of students. Completion rates for Tasmanian butchery apprentices are among the highest nationally. “Teaching has been particularly rewarding for me. I really enjoy helping students improve their technical skills and being a part of their overall career development. It’s been a fantastic chance to give back to an industry that I love,” Darren said. Darren has also supported training as a regional world skills organiser and judge and as a national judge. He trained the 2016 WorldSkills national Butchery gold medallist and has trained many young butchers who have gone on to open their own successful businesses. He has also delivered customised training for scientists working in Antarctica. He customised a unit of training to the needs of the scientists, delivered customised bandsaw training for cutting ice for scientific research worldwide. Darren, will represent Tasmania in his category at the Australian Training Awards in Brisbane, in November. Darren and his colleagues train apprentices from all around Tasmania in the essential skills to become leaders in the trade of butchery. Drysdale Centre of Excellence currently has 68 butchery apprentices enrolled in 2019. Students are trained in all the modern techniques of butchery and class sizes are intimate to allow for more one-on-one training.

Drysdale encourages anyone with an interest in butchery to seek an apprenticeship and enrol at Drysdale Centre of Excellence. Through Drysdale training, apprentices become the trusted experts. They are working in industry and in classrooms, refining their skills so they can be familiar with a modern retail environment.
