Smokey Apple Crisp! 1. I want to start by letting you all know I am not a baker. Use this recipe at your own risk! 2. Here’s the twist, we are making this on the grill with a cast iron pan.
are on. Charcoal grill: Food in the middle and the hot coals to each side of the grill. This could be cooked in a smoker. 8. Place the crisp on the grill. Now add soaked wood chips to the hot charcoals for some smoke, or add a smoker packet to the gas grill. A smoker packet is soaked wood chips wrapped in tin foil with holes (use a fork to poke holes in the tin foil) that you place on/ over the hot part of the grill to get some smoke. You can also buy smoker boxes for gas grills. 9. Cook the crisp until hot, bubbly and browned on the top. Apples should be soft and the filling thick. About 45-50 minutes. 10. Serve it up hot! If you want to take this to the next level, serve with vanilla ice cream on top. This will Wow your guests atThanksgiving!
3. To make the filling, cut/slice 2 pieces of bacon and fry in cast iron skillet. Remove the bacon, drain the fat off, but do not wipe the skillet. The residual bacon fat will add flavor and keep things from sticking. 4. Peel, core and chop apples into 1 inch pieces. About 5 apples. Go bigger or smaller with apple pieces if you prefer. 5. Stir in cranberries (one 12 oz bag), cooked bacon slices, 1/3 cup of brown sugar, 1½ cups of flour, teaspoon of lemon zest, teaspoon of cinnamon, pinch of salt. Stir all ingredients. Optional step: add some Bourbon the mix, about 3 tablespoons. Add filling to the skillet. 6.To make the topping, put all of the following in a food processer: ½ cup of crushed ginger snap cookies, ½ cup of flour, ½ cup of brown sugar, ½ cup of granulated sugar, pinch of salt, 1 stick of unsalted butter cut in ½ pieces. Cut the butter ahead and put in freezer. So it is cold when added to the mix. Make sure you do not over-process the mix. 7. Set up the grill for indirect grilling and preheat to 400’.
