Festive cake with eggnog
Holiday margarita with berries
T his cake is easy tomake and can be baked in a loaf pan or round cake pan. A Bundt pan is also a great option for a special occasion. What a treat! When it’s finished, all you have to do is choose your favourite icing. Ingredients (For 8 people) • 2 cups all-purpose flour • 1 tsp salt • 1 tsp nutmeg • 1 tbsp baking powder • 1 cup sugar • 1 tsp vanilla extract • 1/4 cup lard (or vegetable oil) • 1/4 cup butter (room temperature) • 1 cup eggnog • 3 eggs
• 1 cup dried berries (blueberries, cran- berries, raisins, etc.) • 1/2 cup rum (preferably dark) • Icing (to taste) Preparation 1. In small bowl, pour rum over berries. 2. Preheat oven to 350°F (180°C). Grease and flour bottom and sides of cake pan. 3. In large bowl, sift and mix flour, salt, nutmeg and baking powder. Set aside. 4. In another large bowl, mix together sugar, butter and lard. Continue mixing as you add eggs one at a time and then eggnog, vanilla, rum and berries. 5. Add dry ingredients and mix well. 6. Pour into pan and bake for about one hour or until toothpick inserted in centre of cake comes out clean. 7. Allow cake to cool before covering with your favourite icing.
Ingredients (Serves 1) • 1 cup crushed ice • 45 ml (1½ oz) tequila • 60 ml (2 oz) orange juice • ½ cup frozen berries, thawed • A little freshly ground pepper • Freshmint leaves (for garnish) Preparation Mix all ingredients (except mint) in a high-speed blender. Pour into a margarita or martini glass and garnish with fresh mint leaves.
