1. MELON, CUCUMBER AND PROSCIUTTO SALAD
This sweet-and-savoury salad works as a refreshing appetizer, or you can serve it in small bowls as a light snack alongside drinks. Dice two cucumbers and one melon, such as cantaloupe or honeydew. Combine them in a large bowl. In a separate bowl, whisk together three tablespoons of olive oil, one tablespoon of red wine vinegar and one tablespoon of honey or maple syrup, and add a pinch of salt.
