Focusing on the Heart of the Holiday HAPPY TURKEY(LESS) DAY!

When most folks think of a symbol that goes along with the Thanksgiving holiday, they think of the Thanksgiving turkey, right? So do I, actually, so it shouldn’t come as much of a surprise that when I happen to mention that I am a vegetarian, the very next sentence is usually the question: “What do you do for Thanksgiving?” No matter how many times I’ve heard it, the question always catches me off-guard. “What a silly question!” I think to myself. Everyone knows the Thanksgiving meal is really all about the sides and desserts: mashed potatoes, deep-fried potatoes, green bean casserole, tossed salad, macaroni salad, potato salad, cranberry sauce, corn on the cob, rolls dripping with butter, and pies, pies, and more pies! In addition, I have in recent years made some fantastic meatless turkey substitutes that weren’t available in my teenage years as a vegetarian.

While adjusting to some of those limitations may be challenging, we also have the chance to explore new food options and discover other delicious ways to make the holiday special. Are you trying to cut back on carbs these days? Check out recipes for a spinach casserole or some breaded squash. Has your doctor suggested you reduce your salt intake? Try a cranberry-relish salad, pumpkin-squash casserole, or roasted green beans. There are no hard-and-fast rules for a Thanksgiving meal, so feel free to experiment and spice things up! The Thanksgiving menu isn’t the only thing subject to change; there are lots of reasons why breaking with tradition may sometimes be the best choice. One year, when my kids were little, I had to delay the Thanksgiving meal by several days when my youngest son came down with a stomach virus the day before Thanksgiving. It was so much better to reschedule than to have the holiday without him! This year, I need to get creative again and switch our standard meal location, because my oldest son is recovering from a broken ankle and may not be able to manage the steps up to my house by the time Turkey Day rolls around. Many of our clients at Rinehardt Injury Attorneys may also have to adapt and change old customs or traditions to accommodate their injuries while they recover. I am repeatedly impressed by the resilience and positive outlook our clients show when facing these types of challenges. They continue to remind me that doing things the same way every year isn’t what makes the holiday special; what matters most is gathering with the people we love and celebrating our abundant blessings. So, if you’re changing things up this year either by choice or by necessity, remember that leaving some items (even turkey!) off of the Thanksgiving menu doesn’t have to put a damper on the day. The bottom line is that Thanksgiving allows us all to focus on the many ways we are fortunate — regardless of what we choose to put on our plates.

Becoming a vegetarian is a great way to live a healthier lifestyle, but for many people, the idea of removing meat from their diet is unrealistic, if not borderline impossible. The good news is that you don’t have to completely remove meat from your diet to see physical and environmental benefits. Taking a break from meat for one day a week can produce amazing results, and that’s precisely what Meatless Monday is all about. Meatless Monday is a campaign was started in 2003 by Sid Lerner. It encourages people to reduce the amount of meat in their diet for their health and the health of the planet. The campaign focuses on Mondays because people are more likely to make a positive change at the beginning of every week. Individuals participating in Meatless Monday are more likely to eat more fruit, vegetables, and plant-based meals throughout the week. Participating in this practice can do wonders for your body. Eating fruits and vegetables helps your body fight off cardiovascular disease. PAM FRITZ There are few people whose presence readily brings to mind the word “inspiration,” but Pam Fritz is definitely one of those few! We first got to know Pam as a client back in 2015 but have stayed friends ever since. Pam has a unique ability to see the positive side of just about every situation, and she’s quick to share her spirit and sense of humor with everyone she meets. Vibrant, warm, and sharp- witted, Pam is wise beyond her years and helps us all to see the best in each other despite life’s ups and downs. Even when facing adversity and hardship, Pam finds a way to focus on joy. Eating more greens makes us more likely to maintain a healthy weight, which can help prevent Type 2 diabetes and obesity. Your wallet will also thank you for making the switch to Meatless Mondays. Meat is one of the most expensive items on our grocery lists, so skipping meat for one day a week will leave extra money in our pockets. Did you know the United States consumes more animal products than nearly any other country? It’s true, and the meat industry has to use large amounts of fossil fuels, water, and grains to produce meat when they could be better used elsewhere. About 1,850 gallons of water is needed to produce a single pound of beef, compared to only 39 gallons of water per pound of vegetables. When you participate in Meatless Monday, you will save 133 gallons of water each week while reducing your weekly carbon footprint by 8 pounds. Removing meat from your diet is not an easy decision. If you’ve been interested in becoming a vegetarian or reducing your carbon footprint, give Meatless Mondays a try. It could eventually lead you to a full- blown vegetarian diet after you experience the benefits firsthand. Inspiration Corner

VEGETARIAN GRAVY

INGREDIENTS • 2 tbsp unsalted butter • 1 small red onion, halved and thinly sliced • 1/2 tsp granulated sugar • Salt • Pinch of dried oregano • 2 tbsp all-purpose flour • 2 cups vegetable stock • 1/4 cup whole milk • 1 tbsp nutritional yeast (optional, but very good) • Freshly ground black pepper Who says you can’t make good gravy without a bird? This make- ahead gravy relies on a base of caramelized red onion and gets its body from flour, milk, and vegetable stock. Nutritional yeast is an optional umami enhancer that adds a nice depth of flavor. (It’s also good on popcorn.) Keep this covered in the refrigerator and then reheat before serving.

DIRECTIONS

1. Melt the butter in a large skillet over medium heat. Add onion and sugar, and season with salt. Cook, stirring occasionally, until the onion is browned but not burnt, 10–12 minutes. 2. Add the oregano and flour and cook, stirring constantly, until the flour has been absorbed by the buttery onions, about 30 seconds to 1 minute. Whisk in the vegetable stock and milk, raise the heat to high, and while whisking periodically, bring mixture to a boil. Immediately reduce heat to maintain a simmer and cook, still whisking occasionally, until the stock thickens into a loose gravy that thinly coats the back of a spoon, about 5 minutes. 3. Whisk in the nutritional yeast, if using, and taste for seasoning, adding more salt and pepper as desired. Serve hot.
