AgeWell / Livewell would like to highlight a vital member of the therapy team. Evangelos Zahos from Lindenhurst touches many lives each day in his role as a therapy tech. His position exposes him to patients working hard to recover from injuries, surgeries and falls. Through Evan’s experiences as a starting college football player and with a bachelor’s degree in

training schedule to improve his own physical abilities. Being a receiver on one of the country’s most competitive flag football teams, Evan must keep himself in optimal physical condition. With games nearly every weekend and frequently out of state, his schedule keeps him in motion seven days per week. While at work in the therapy office, Evan is known for his kindness and compassion towards patients, but on the field of play, he is best known for his incredible speed and seemingly impossible catches. Some of Evan’s amazing football receptions have even gone viral and can be viewed on-line. While Evan continues to explore his options and future in football, he also has his eye on graduate school and dreams of one day opening a training facilitywhere he can help others reach their optimal level of physical performance. The staff and therapists at AgeWell / LiveWell feel fortunate to have a person of Evan’s caliber working alongside of them. • 1/2 cup pecans • 1/3 cup olive oil

• 1 head leaf lettuce, torn • 3 pears • 5 ounces Roquefort cheese • 1 avocado • 1/2 cup sliced green onions • 1/4 cup white sugar

• 3 tablespoons vinegar • 1 1/2 teaspoons sugar • 1 1/2 teaspoons mustard • 1 clove garlic, chopped • 1/2 teaspoon salt

INSTRUCTIONS In a skillet over medium heat, stir 1/4 cup of sugar together with the pecans. Continue stirring gently until sugar has melted and caramelized the pecans. Carefully transfer nuts onto waxed paper. Allow to cool, and break into pieces. For the dressing, blend oil, vinegar, 1 1/2 teaspoons sugar, mustard, chopped garlic, salt, and pepper. In a large serving bowl, layer lettuce, pears, blue cheese, avocado, and green onions. Pour dressing over salad, sprinkle with pecans, and serve.
