3 Hours Changed Everything Remembering
the 9/11 Attacks
Sept. 11, 2001, is a day I remember vividly. When I talk about this horrific event, all the emotions and thoughts come back to me as if it happened yesterday. It was a Tuesday morning, and I went on my way to a client’s house. Back then, I worked as a personal chef who cooked meals for private clients. I started my day by heading to the grocery store to purchase supplies; it was a routine that I began each day with, and I always knew what to expect. But no one could’ve guessed that this Tuesday morning would’ve turned out the way it did. I remember leaving the store, getting into my truck and making my way to my client’s house. During my drive, I listened to the news on the radio, and that’s when I heard about the planes crashing into the World Trade Center. I was so stunned when the newscaster announced that. My whole body was in shock, and I felt too stunned to speak. I’m not sure how I continued to drive. When I got to my client’s home, I brought in all of my supplies. As I was unloading, he watched the news. It felt like I couldn’t move — stuck in one spot while I saw the Twin Towers go up in flames. Then,
I WISH IT WERE A BAD DREAM AND WE WOULD ALL WAKE UP. BUT THIS WASN’T A DREAM — IT WAS A HORRIFYING REALITY.”
we received news about another plane hitting the Pentagon.
Disbelief, confusion and fear ran through me as I watched what happened in real time. Each time I tried to go to the kitchen to get started on my meals, I found myself being drawn back into the living room to listen and watch the horrific scene currently unfolding. Then, I saw the first tower collapse. My heart dropped — I couldn’t

With the increasing cost of living, some people struggle to pay their bills, make repairs and live a comfortable life. But one man in Burnley, England, noticed this difficulty and wanted to make a difference. James Anderson is hailed as a modern-day hero because of his commitment to his community. He created Disabled & Elderly Plumbing and Heating Emergency Repairs (DEPHER), which provides subsidized services for individuals struggling to pay bills, offers emergency plumbing and heating assistance, delivers food and more. Anderson and his team have helped over 52,000 families in the past six years. Anderson thought of launching his own organization after he went to look at a boiler in a gentleman’s house. The company the man went to first attempted to scam him out of thousands of pounds he didn’t have. Anderson noticed that instances like this happen frequently where older adults are taken advantage of. So, he wanted to make a change and ensure others were getting the care they deserved. THE FOUNDER OF DEPHER MADE A DIFFERENCE IN HIS COMMUNITY
had for the United States and standing hand-in-hand to support our country was beautiful. America is special, and it’s worth protecting. It felt like everyone agreed with this sentiment the few days after the 9/11 attacks. I hate that it takes a tragedy for a nation to come together, but I miss the unity we all shared that day. Today, our country is divided. There is so much hatred and bias today that I think it’s clouded many minds. People have forgotten how special our country is. I wish we could all come together and share the same patriotic and unified spirit we all had years ago. Hopefully, we will find that common ground soon. I just hope it doesn’t take another traumatic event for us to get there. Network. He doesn’t want anyone to feel like they are alone. There are people who want to help and provide them with a better way of living. Recently, Anderson and his team helped a 78-year-old woman who couldn’t afford to pay for her groceries because of her bills. The energy company she uses recently took £766 ($909) out of her account, which was much more than what she owed. DEPHER stepped in and covered the elderly woman’s groceries but also got the energy company to issue her a full refund. The random acts of kindness by DEPHER have impacted not only the individuals who receive help but also people worldwide. Some of Anderson’s works went viral on social media a couple of months ago and inspired others to help those in their community.
“What we try to do is help people realize there is somebody out there who will help them,” Anderson told Good News

believe it. It felt like I was in a parallel universe watching the towers fall and seeing people’s lives end. In just three hours, everything changed. I wish it were a bad dream and we would all wake up. But this wasn’t a dream — it was a horrifying reality. My wife came by the house I cooked at, and we just hugged each other and sobbed. Our hearts went out to families who were severely impacted. I worried about our nation and what would come from this horrific tragedy. I’ll never forget trying to explain this incident to my daughter, who was in third grade at the time. I couldn’t find the right words or explanation to give her because I couldn’t quite understand it myself. It felt like all the oxygen had been taken out of our bodies for the next few days. The whole world shut down as people tried to come to terms with the incident. I canceled all my appointments for the rest of the week as our nation tried to heal. Although this was a horrifying day for us Americans, I’ve never seen our country come together in such unity after the attack. Seeing the patriotism people

The term “whole grains” is tossed around in commercials, on food labels and on social media, but it’s not a term that’s often defined fully. So, we’re here to tell you! What are grains? Grains are the edible seeds of plants that are either whole or refined. Whole grains contain three parts of a kernel: the bran, germ and endosperm (starch). These grains have lots of nutrients that positively benefit your body and health. Wheat, corn, brown rice, oats, brown pasta noodles and barley are some examples of whole grains. A refined grain is milled and processed, which extracts some of the grain’s nutrients. Examples of refined grains are white flour, white rice and white bread. Why are whole grains important? Whole grains provide antioxidants, vitamins, minerals, magnesium, iron and fiber, which are great for your body. Fiber is one of the most under-consumed nutrients in America, but luckily, whole wheat food products are high in fiber. This nutrient can help lower your cholesterol and help you remain full after a meal. In general, fiber and whole grains can also decrease the risk of heart disease and provide cancer-fighting benefits. How can you eat more whole grains? According to the Dietary for Americans (DGAs), half of your daily grains should be whole. Unfortunately, there isn’t a universal standard of how many ounces of grains you should consume. The number of ounces you need depends on your age, gender, height, weight and level of physical activity. For more information about how many grains you should consume and other nutrient intakes, go to MyPlate.gov. Besides seeing how many grains you must consume daily, another way to get more whole grains in your diet is to choose 100% whole grain bread, cereal, pasta, rice, oats and popcorn. Be sure to use raw kernels and air pop your popcorn for the best and healthiest results. If you need more whole grains in your diet, October Kitchen has you covered. We cook everything with the finest ingredients that are both mouth-watering and healthy. Try one of our meals today; your tastebuds and body will thank you. WHOLE GRAINS ARE EVERYWHERE! illness, weakness or dizziness. It allows them to overcome stiffness or unsteadiness and develop an awareness of body segments and how to align them. These exercises help with balance. Balance training involves exercises to strengthen the muscles that help keep you upright and improve stability. These types of exercises can be done as often as you like or even every day. Consider trying the following exercises: • Standing with your weight on one leg and raising the other leg to the side or behind you • Putting one heel right in front of the other foot, as if you were walking a tightrope • Standing up and sitting down from a chair without using your hands • Walking while alternating knee lifts with each step • Stretching and gentle movement as part of yoga or tai chi Balance is essential to living a healthy, functional life. It’s important to incorporate balance training into your fitness regimen. That way you can decrease the risk of injuries and help move freely and confidently.
Though we may not always think about it, balance is essential to just about everything we do in our daily routines. From simply getting out of bed, leaning over to tie our shoes or even walking to the mailbox, we need good balance to keep ourselves steady while performing normal tasks. Know why balance is important. Balance is the ability to control your body’s position, whether stationary or moving. It is a key component of fitness that many people neglect while developing their fitness regimen. Balance training is a great way to help your body recognize where it is and control movements in a given space. When the body knows where its limbs are in space — known as proprioception — it is able to produce smooth, controlled movements with fewer risks of injuries. Reaction time and agility are also improved with balance training. The body learns how to quickly correct itself but not overcompensate and has the ability to quickly change direction effectively and efficiently.
Though balance training is important for everyone, it is especially important for those who have problems due to
