Seasonal Recipe Brown Butter Pumpkin Cookies

3/4 cup brown sugar

1 eggyolk, (at room temperature)

1 cup unsalted butter

2 tsp purevanilla extract 1 cup pumpkin puree

2 cups old-fashioned oats 1 and 2/3 cup all-purpose flour

1 tsp baking soda

BrownButterGlaze •

1/2 tsp salt

1/4 cup unsalted butter

1 1/2 tsp ground cinnamon 1 1/2 tsp pumpkin pie spice* 1 cup granulated sugar

1 1/2 cups confectioners’ sugar

3Tbsp milk 1/4 tspvanilla

Directions Inaskillet,meltandbrown1stickofbutterovermediumheatforabout5-8min.Removefromheatand letcoolfor 5 min.While cooling,whisk oats, flour, baking soda, salt, cinnamon, and pumpkin pie spice together in a medium bowl.Preheatovento350˚Fand linetwobakingsheetswithparchmentpaper.Setaside.Pour3/4cupofthecooled brownbutter intoa largebowlandwhisk ingranulatedsugarandbrownsugaruntilcombined.Whisk ineggyolk andvanillaextract,andthenpumpkinpuree untilcombined.Mix indry ingredients intothewet ingredientsuntil combined.Useamediumscooptoplaceballsofcookiedoughontothetwobakingsheets3 inapartfromeachother. Bake for 14-15 minutes until lightly browned, then let cool for 10 minutes. For Icing: Blend remaining 1/4 cup of brownedbutterwith theremaining ingredientsuntilsmooth, then icecooledcookiesbeforeserving.
