Healthy Recipe
Spinach, Gruyere, Dried Cranberry, & Walnut Salad Directions
8 Ingredients • 3 tablespoons extra-virgin olive oil • 2 teaspoon sherry vinegar • 2 teaspoons balsamic vinegar • 1/4 teaspoon kosher or sea salt • 4 cups baby spinach leaves • 3 ounces Gruyere cheese, cut in 1/2 inch cubes • 1/4 cup dried cranberries • 1/2 cup chopped walnuts plus 10 to 12 walnut halves
In the bottom of a salad bowl, using a fork or whisk, mix together the olive oil, the 2 vinegars and the salt. Add the spinach, cheese, cranber- ries, and the chopped walnuts. Toss the salad to coat well, then garnish with the remaining walnuts.
Exercise Essentials Try these simple exercises to keep you moving... Always consult your physical therapist or physician before starting exercises you are unsure of doing.
TANDEMWALK - WALL Stand with the fingertips of one, or both, hands resting on a wall. Place the feet ‘heel to toe’ with the left foot forward. Steady yourself in this position. Step forward with one foot, placing the heel directly in front of, and touching, the toes of the other foot. Repeat this sequence 8 times, moving forward down the hallway. Reverse direction, moving backward down the hallway.
ALTERNATING STEP TOUCH Stand “tall”, with sturdy step stool positioned in front. Step one foot at a time onto the stool. Alternate legs and repeat 10 times.
