Five reasons to eat more tomatoes

Tomatoes are a versatile crop that can be used in endless mouth-watering dishes. Pasta sauce, tomato rosemary soup, spicy Mexican salsa — whether puréed, roasted or sliced fresh, tomatoes add a tangy burst of flavour to your favourite home-cooked meals. But there’s more to tomatoes than their great tas- te. One of the most widely consumed foods in the world, this juicy red fruit (often mista- ken for a vegetable) is brimming with health benefits! Tomatoes: 1. Fight disease. Have you ever wondered what gives tomatoes their vibrant colour? That would be a bright red carotene pig- ment called lycopene. Found primarily in the fruit’s skin, lycopene contains power- ful disease-fighting agents that reduce the risk of prostate and other cancers, as well
as heart disease like atherosclerosis.

The vitamin A found in tomatoes works wonders for improving vision (especially night vision) and protec- ting the eyes from infection.
