ROASTED PORK LOIN
DELICIOUS FOR THE ENTIRE FAMILY
1.5kg roasted vegetables (potatoes, pumpkin, carrots and parsnip) 200g baby peas 600ml gravy 200ml apple sauce
Step 1 Remove pork from packaging, dry, then pour boiling water over the rind and pat dry again. Rub with oil and sea salt. Roast at 240°C for 40 minutes, then 180°C for 30–35 minutes per kg. Rest 10–15 minutes before slicing. Serve with vegetables, peas, gravy, and apple sauce.
The secret to perfect crackling is completely dry rind, boiling water, sea salt, oil, and high heat before slow roasting.
