Safe Mandoline Use
• As a cook, you use a mandoline to slice cheese, fruits, and vegetables. • A sharp mandoline is a safe mandoline because less force is required to make the slice. More force can lead to the hand slipping and being injured. • A well maintained and sharp mandoline easily cuts the food you are preparing, but if not used correctly, it can easily and severely cut your fingers. • The mandoline should be placed on a stable cutting board with slip resistant corners or a slip resistant mat or towel underneath. • A pusher tool designed for the mandoline should be used to hold the food being sliced and to keep the blade away from your hand. • The work area should be clear for easy movement. • AVOID using the mandoline without the pusher tool. However, if you must, wear a cut resistant glove as illustrated to the left. • Even when wearing a cut resistant glove, keep your eyes on task and your hands away from the blade. • NOTE: For illustration purposes, the Cook to the left is not wearing a nitrile glove. A nitrile glove should be worn to prevent food illness. • When changing the blade, wear a cut resistant glove. • The mandoline should not be washed by hand unless wearing a cut resistant glove. The better method is to send it through the dishwasher.
