Ingredients

COLCANNON

• 1 pound cooked bacon, chopped into small pieces • 4 scallions, finely chopped • Parsley, for garnish • Salt and pepper, to taste

• 3 pounds potatoes • 2 sticks butter • 1 1/4 cups hot milk • 1 head cabbage, cored and shredded

GOOD CHEER Beer lovers, rejoice! Idaho is the world’s largest hop producer, and more and more people are taking advantage of our agricultural bounty by opening breweries in the Treasure Valley. Share a few of these treasures with visiting family members and their only question will be “How did we not come here sooner?” 1. Steam potatoes for 30 minutes. Peel skins nd mash flesh thorou hly. 2. Chop 1 stick of butter into small cubes and add to warm potatoes. Once melted, slowly add milk, stirring constantly. 3. Boil cabbage in water. Add 2 tablespoons of butter to tenderize. 4. Add cabbage, bacon, and scallions to mashed potatoes, gently stirring to com ine. 5. Serve garnished with parsley and a pat of butter.

EQUINOX

Look at your March calendar, and you’ll see a special note on March 20: spring equinox. What is this date? And why did it matter to ancient civilizations? The word equinox comes from Latin — “equi” meaning equal and “nox” meaning night. It marks the day when the sun’s terminator (the divide between night and day) is perpendicular to the equator, giving equal amounts of day and night to each side of the earth. We have a spring and a fall equinox because of the Earth’s rotation and tilt. For ancient civilizations, time was marked by the sun’s activity, so the equinox was a big event. For us, it’s a sign that the days are starting to get longer and warmer! Celebrate by enjoying a hike in our beautiful foothills.The equinox is also a good marker of when we can begin to prepare our gardens.
