Steve’s Monthly Recipe Beer Can Chicken with Classic BBQ Rub

It has been years since I made this, but it is one of my favorites. It starts with your favorite barbeque rub. I used ¼ cup of course salt, ground black pepper, paprika, and brown sugar. The next few spices are optional, but

picture. I would pick a beer with some flavor, probably stay away from light beers. I also add some of the rub to the beer can. Clean and dry the chicken. Apply olive oil to the chicken. The oil helps to crisp the skin and helps the rub to stick to the chicken. Generously apply rub to inside and outside of chicken. Place the chicken on the beer can and put it all on the grill. The temperature on my charcoal grill was 375-400’ and it took about an hour. To add additional flavor and to keep the chicken from drying out, I spray with beer while cooking. Use an instant read thermometer to make sure the chicken is cooked to 165’. Be careful of the hot liquid in the beer can when you remove from the grill. Slice and chicken and enjoy.

I included them in my spice rub: tablespoon of onion powder, garlic powder, cayenne pepper, and celery seed. You will have leftover rub, it goes great on ribs.
