Ms. Sheila’s Italian Cream Cake

INGREDIENTS: Cake ingredients • ½ cup butter softened • ½ cup vegetable shortening • 2 cups granulated sugar • 6 egg yolks • 2 cups self-rising flour (if you use all- purpose flour add one teaspoon baking soda) • 1 cup chopped pecans

• 1 teaspoon vanilla • 1 cup buttermilk • 1 cup coconut – shredded and sweetened

Frosting ingredients • ¼ cup butter softened • 8 ounces cream cheese at room temperature • 1 pound powdered sugar • 1 teaspoon vanilla • ½ cup chopped pecans

Preparation: Cake directions

Preheat oven to 350º. Grease and flour three 8-inch cake pans. In a large bowl, cream the butter and shortening until smooth. Add the sugar and beat well. Add the egg yolks and mix well. Sift the flour and add into the sugar and butter mixture a little at a time alternating with the buttermilk. After mixed well, add coconut and pecans. Fold in the egg whites that you have left and set aside. Fold them in carefully until no pockets remain. Divide evenly between three prepared pans. Bake 25 minutes or until done. Turn out on to a wire rack to cool completely. Frosting directions Cream the butter and cream cheese until well mixed. Add the vanilla and powdered sugar and mix until well combined. Spread between layers of cake and on top and sides. Sprinkle pecans over the top and the sides, I mix them in with my frosting.

Meet Ms. Sheila. She came to us with severe back pain and unable to do the things she wanted to do. She is now able to do the things she loves, which even includes getting back to riding her motorcycle. Ms. Sheila is 70 and doesn’t let that stop her. She thinks the same way we do, age is just a number and we shouldn’t let that number limit us. Staying active and keeping moving is so important at every age, she is a perfect example of that - check out her pictures below and how great she is at stretching out her hamstrings. She can touch the wall behind her! WOW! Here is Ms. Sheila’s story in her own words; “I would like to start by saying thank you to all the team here at Lonoke Physical Therapy, they are wonderful and caring. It all started when my back got to hurting so bad I couldn’t get out of the bed good or do any of my work. I was almost in tears from pain. Okay, it’s time for the doctor. I had a CAT scan done and he said he could send me to a surgeon. I asked if he thought physical therapy would help. His answer was, you can try it for four weeks and see if you would like it. That’s just what I did. It was hard at first, but IT WORKED wonderful. I can do all my work

now and no pain. I am now able to bend over and pick up limbs and do my yard work without pain. Vacuuming and house work are no longer difficult and I can get out of the recliner, car, bed, etc. easier and without pain. I am 70 years old and have learned a valuable lesson. For two years I stopped exercising, that was the wrong thing to do. I now know you will always have to exercise or lose flexibility. They taught me the exercises I need to keep doing for my back. Here at LPT your goal is their goal and it’s very important to them. They all enjoy what they do, it’s not just a job to them and they are helping people get better. Exercise Essentials Try these exercises to help keep you moving...

BUTTERFLY STRETCH While in a sitting position, bend your knees and place the bottom of your feet together. Next, slowly let your knees lower towards the floor until a stretch is felt at your inner thighs. Repeat 5 times.

PIRIFORMIS STRETCH - MODIFIED While lying on your back, hold your knee with your opposite hand and draw your knee up and over towards your opposite shoulder. Alternate knees and repeat 8 times.
