How does corn become Popcorn? When heated, the moisture inside the corn kernel expands until the hard shell cannot hold it anymore and bursts. In a split second, the heated starch swells under the pressure of water vapor and exits in the form of a foamy structure. It loses temperature and solidifies immediately through rapid cooling. So Popcorn is a small frozen ex- plosion.
The volume test Which type of corn has a higher volume? The one that looks like a mushroom when it pops, or the one that resembles a butterfly? You'll never guess! 1 + 1 = 2?
