Sardinia’s Alghero is marked by Catalo- nia when it comes to the language and ar- chitecture, but it remains completely true to its own local heritage when it comes to cuisine. Seadas represent the best exam- ple of that combination: fried pastry fi- lled with fresh pecorino cheese and dri- zzled with warm honey. The contrast is key — salty, warm pastry and sweet, thick honey. This dish isn’t left to cool, becau- se it quickly loses its basic structure. The cheese should be elastic, almost stretchy. Interestingly, this dessert comes from the pastoral tradition of Sardinia, where sim- ple ingredients had to be filling and lasting. Honey was added as a natural preservati- ve and source of energy, so the combina- tion was born of necessity, as opposed to being a gastronomic experiment. Apart from seadas, there are also pardu- las (small tartlets filled with cheese and saffron) and amaretti sardi almond coo- kies, but nothing represents that unique combination of sweet and savoury in one bite, where everything smells of the beau- tiful Sardinia.
ALGERO i seadas ALGHERO & SEADAS Algero na Sardiniji nosi katalonski trag u jeziku i arhitekturi, ali u kuhinji ostaje potpuno dosledan sopstvenom lokalnom na- sleđu. Seadas je najbolji primer tog spoja: prženo testo pu- njeno svežim pekorino sirom, koje se odmah nakon prženja preliva medom. Kontrast je ključan – slano, toplo testo i sla- dak, gust med. Jelo se ne ostavlja da se ohladi jer se tada gu- bi osnovna struktura. Sir treba da bude elastičan, skoro raste- gljiv. Inače, ovaj desert potiče iz pastirske tradicije Sardinije, gde su jednostavni sastojci morali da budu zasitni i dugotrajni. Med je dodavan kao prirodni konzervans i izvor energije, pa je spoj nastao iz potrebe, a ne iz gastronomskog eksperimenta. Pored seadasa, tu su i pardulas (male pite sa sirom i šafra- nom) i bademasti keksići „amaretti sardi“, ali ništa ne nosi tu jedinstvenu kombinaciju slatkog i slanog u jednom zalogaju u kojem sve miriše na prelepu Sardiniju.
