Hospitality Review April 2017 - Digital copy

A brand new cookery course designed by TasTAFE Drysdale in partnership with industry will give budding chefs the opportunity to rub shoulders with some of the world’s top culinary minds and learn more about working with Tasmania’s premium produce. TasTAFE Drysdale Division Manager, Maree Gerke, said the Grown In Industry: Premium Cookery course, will provide a once in a lifetime experience for students in Devonport, Launceston and Hobart. “As well as being a new approach to Certificate III Cookery training, the exciting thing about this course is that it will provide participants with a guaranteed, direct and supported pathway to employment as an apprentice with one of our partners on successful completion of stage one of the course,” Ms Gerke said. “This has been made possible through the fantastic support of some of Tasmania’s best restaurants and hotels who are partnering with us to ensure that participants will complete this course as qualified chefs who are trained to the best and latest industry standards.” Partner organisations include: Salamanca Inn, Hotel Grand Chancellor, Frank Restaurant and Bar, Shoreline Hotel, Kalis Hospitality, Smolt, Timbre Kitchen, The Sebel Launceston, Mantra Group, Barnbougle and Blue Café Bar. “Students will gain practical experience working with expert teachers, industry guests, farmers and producers, with the added benefits of our student support services. “The centrepiece of Grown in Industry is Drysdale’s Great Chef Series – an event that invites culinary superstars into the Drysdale kitchens to mentor and cook beside students throughout the teaching year. Participants will immerse themselves in premium Tasmanian produce – meeting producers and gaining an understanding of their craft,” Ms Gerke said. Enrolments for Grown in Industry are being taken until the end of April.
