CRISPY CHEESE & ONION FRITTERS

INGREDIENTS • 2 large onions, thinly sliced • 1 cup flour • ½ cup water (or milk for extra richness) • 1 egg (optional, for extra binding) • ½ tsp baking powder • 1 tsp salt • ½ tsp black pepper • ½ tsp smoked paprika (optional, for extra depth) • ½ tsp garlic powder • ½ tsp chilli flakes (optional, for heat) • 1 tbsp fresh parsley, chopped • 1 cup grated cheese (cheddar, gouda, or mozzarella) • Oil for frying • Spring Onion to garnish

you get a thick batter. If using an egg, whisk it in as well. 3. Mix in the cheese & onions Stir in the sliced onions, parsley, and grated cheese, ensuring everything is well coated. Heat the oil – In a braai-friendly pan, potjie, or cast-iron skillet, heat about 2 cm of oil until hot. 5. Fry in batches Drop spoonfuls of the batter into the oil and fry for 2-3 minutes per side, until golden brown and crispy. 6. Drain & serve Remove and place on paper towels. Serve hot with a chilli dip, garlic aioli, or plain yoghurt. Tips & Variations Braai-Friendly Version – Cook in a well- oiled potjie over medium coals for a deep-fried texture. Spicy Kick – Add chopped jalapeños or peri-peri sauce to the batter.
