BACON FLAPJACK STACKS
INGREDIENTS For the flapjacks: • 1 ½ cups self-raising flour • 1 tbsp sugar • 1 pinch of salt • 1 egg • 1 ¼ cups milk • 2 tbsp melted butter For the bacon: • 6-8 slices of streaky bacon For the topping :
3. Cook the flapjacks: Heat a non-stick pan or griddle over medium heat and lightly grease it with butter or oil. Pour small portions of batter onto the pan, cooking for 2-3 minutes per side or until golden brown and cooked through. Repeat with the remaining batter. 4. Assemble the stacks: On each plate, stack two or three flapjacks. Layer the crispy bacon slices in between the flapjacks. Drizzle maple syrup or honey over the stack for added sweetness. 5. Serve and garnish: Garnish with fresh herbs if desired for a little extra flair. Serve immediately while warm and enjoy the sweet and savoury combination! Tips: • Feel free to add some cheese to the batter or sprinkle it over the top for a savoury twist. • For extra decadence, add a dollop of whipped cream or a few slices of fresh fruit on top.

Fry the bacon in a large pan over medium heat until crispy, turning occasionally. Remove the bacon and set aside on a paper towel-lined plate to drain any excess fat. 2. Make the flapjack batter: In a large bowl, combine the self-raising flour, sugar, and salt. In a separate bowl, whisk together the egg, milk, and melted butter. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. The batter should be smooth.
