Welcome, Chris Santospirito

We have exciting news! Allow us to introduce our newest Dellutri Law Group family member! Attorney Chris Santospirito is joining us as a family law attorney! Chris is a Fort Myers local and has ties to our Orlando location. Chris graduated from Bishop Verot High School, which is located one road away from our Fort Myers office. His is in good company as an alumnus of Bishop Verot, as both of our bankruptcy attorneys (David Lampley and Jeff Lampley) graduated from there! He also loves to watch baseball (he previously played local ball), play retro games, and work on his car.

Holiday Roast Prime Rib

Ashley Baker, formally known here as Ashley Griffith or AG, has been an important part of our family for over 10 years! Her title is legal assistant, but Ashley is so much more. She knows how to easily maneuver from team leader to team player at a moment’s notice. Ashley describes her primary responsibility as “helping clients who are trying to save their homes.” It’s Ashley’s big heart that keeps her focused every day. She says that her biggest challenge on the job

Ingredients • 1 bone-in prime rib (6–7 pounds) • 8 cloves garlic, thinly sliced

• 1 tablespoon fresh thyme, chopped • Salt and freshly ground pepper, to taste

• 2 cups red wine • 4 cups beef stock Directions 1. 30 minutes before cooking, remove roast from fridge and let sit until it reaches room temperature. 2. Heat oven to 350 F. 3. Make small slits in prime rib and stuff with slices of garlic. Liberally season with salt and pepper. 4. Place a rack inside a roasting pan and roast prime rib for 2 hours, until medium-rare. 5. To make au jus, place roasting pan with drippings from roast over 2 burners on high. Add wine and scrape pan as liquid reduces. Add beef stock and cook until reduced by half. Finally, sprinkle in thyme. 6. Slice roast and serve topped with au jus.
