Over 500 locations have signed on to host events and activities, which will benefit over half a million women. Rue & Primavera is proud to join other fitness and health organizations across the United States participating in National Women’s Health and Fitness Day. This will be a fun, informational day where women can learn about the many health opportunities available to them in their communities and find the resources best suited to their lives. One of those resources is Whidbey Health and Medical Center which offers free heart health screenings for women who cannot afford it. This is a program made possible by Soroptimist of Oak Harbor, Coopeville and Langley. To request a screening, call 678-7656 ext., 3120. One woman dies of cardiovascular disease every 80 seconds, and approximately 8 million women have been diagnosed with chronic lower respiratory disease. In most circumstances, proper physical fitness can prevent these deadly conditions. Unfortunately, only 18 percent of American women meet recommended exercise requirements. Wednesday, September 27, marks the largest annual health promotion event for women of all ages: National Women’s Health and Fitness Day. Patricia Henze, executive director of the Health Information Resource Center and NWHFD organizer, says the goal of this day is “to encourage women to take control of their health, to learn the facts they need to make smart health choices, and to make time for regular physical activity.”

This easy, healthy, hearty recipe is a delicious way to use the harvest from your vegetable garden.

2 tablespoons vegetable oil 1 small eggplant, cut into 1-inch pieces (4 cups) 1 medium zucchini, coarsely chopped (2 cups) 2 tomatoes or 4 Roma tomatoes, coarsely chopped (1 cup) 1/3 cup chopped red onion 1 (19-ounce) can cannellini beans (white kidney beans), rinsed and drained In a large skillet, heat oil over medium heat. Add eggplant, zucchini, tomatoes, red onion, and garlic. Cook, uncovered, 7–10 minutes or until vegetables are almost tender, stirring occasionally. 2 cloves garlic, minced

1 3/4 cups reduced-sodium chicken broth 1 cup dried whole grain elbow macaroni 1/2 teaspoon crushed red pepper Ground black pepper (optional) Snipped fresh basil Grated Parmesan cheese Kosher salt

2. Add beans, broth, pasta, and crushed red pepper. Bring to a boil, then reduce heat. Cover and simmer 7–10 minutes more or until vegetables and pasta are tender, stirring occasionally. Remove from heat. Season with salt and pepper; top with basil and Parmesan cheese and serve.
