The city of Hoboken presents the Hoboken Spring Arts & Music Festival for the 23rd year in a row! With over 300 artists, crafters, photographers, and sculptors, attendees are bound to find something they love. Food vendors and local restaurants will be open for business, and children can take part in rides, games, face painting, and live musical performances on three separate stages. The Solace Sunrise Walk is an annual 5K walk and run that raises funds and awareness for suicide and self-harm prevention. This race begins in the dark and early hours of the morning, and participants can expect to cross the finish line just as dawn is breaking. It’s truly a spectacular way to start your day! The eighth annual NYC Vegetarian Food Festival will showcase 100 percent vegan innovation with revolutionary, plant-based food products, as well as fun for adults and kids alike. This event consists of over 100 plant-based food and lifestyle vendors and three fully programmed stages highlighting more than 40 world-class speakers, chefs, and entertainers over the course of the weekend. Sautéed Zucchini

and SquashWith Feta

Ingredients

1 zucchini

• • •

2 teaspoons fresh thyme

1 summer squash

1/4 cup crumbled feta cheese

1/2 medium red onion

Salt and pepper to taste

2 tablespoons extra-virgin olive oil

Directions

1. Cut zucchini into 1/4-inch-thick semicircles. Dice onion.

2. Heat a large skillet to medium-high. Add olive oil, onion, and thyme.

3. Once onion is soft (about 2 minutes), add zucchini and squash. Season with salt and pepper; cook 4–5 minutes until squash barely begins to caramelize.

4. Place in serving bowl and top with feta.
