You need only talk to Chef Josh for a few moments to realize the passion he has for cooking and preparing food for others. “To me food is not just a bunch of ingredients with a protein put on a plate. It is being able to marry the ingredients together in a way that is visually appealing and offers a taste that people will remember. The satisfaction that my food brings to my customers gives me the drive to continue to learn and perfect that next dish.” Chef Josh began operating his own personal chef business in 2013. By 2019, Chef Josh had served over 25,000 plates to his customers.

BASIL AIOLI

1 ½ cups mayonnaise ²⁄₃ cup chopped fresh basil 1 tbsp chopped fresh garlic

1 tbsp lemon juice 1 ½ tsp lemon zest

Mix all ingredients in a bowl. Once mixed, add the mixture to a food processor and pulsate the mixture until the garlic and basil are finely chopped. Place in a sealed container. This aioli can be refrigerated and enjoyed for up to 90 days.
