PATTI BAUER – MSPCA
“The mission of the Massachusetts Society for the Prevention of Cruelty to Animals (MSPCA) is to protect animals, relieve their suffering, and advance their health and welfare,” Patti told us. “I chose this charity because it helps those that cannot help themselves. Our animals depend on good humans, and this organization facilitates that care and compassion.” Patricia Bauer was chosen as patient of the month not just because the story of her injury and recovery is amazing, but because the way she approached her rehabilitation was inspiring and entertaining. Patti brought such exuberance and humor to each PT session that sometimes we thought she was running an obstacle course. Every gain she made along the way was celebrated, and her unflagging positivity helped her meet the bigger goals. In the face of a significant challenge, her perseverance — and competitive nature — paid dividends. To say that Patti made an impression here would be quite an understatement. Way to go, Patti!

Hong Kong Egg Tarts Celebrate Chinese New Year in style with these egg tarts! Originally a Portuguese delicacy, these marketplace treats were influenced by British custard tarts and eventually became a Hong Kong staple.

• Vanilla extract • 2/3 cup white sugar • 1 1/2 cups water • 1 cup evaporated milk
• 1 cup confectioners’ sugar • 3 cups all-purpose flour • 1 cup butter • 10 eggs, beaten
Directions 1. In a medium bowl, mix confectioners’ sugar and flour. Mix in butter with a fork until crumbly. Stir in 1 beaten egg and a dash of vanilla until doughy. Shape dough into 1 1/2- inch balls and press into tart molds. Use 2 fingers to fold down edges of dough. 2. Heat oven to 450 F. In a medium saucepan, combine white sugar and water; bring to a boil. Simmer until sugar is dissolved, then let cool. Strain remaining 9 eggs through a sieve, then whisk in sugar mixture. Stir in evaporated milk and a dash of vanilla. Strain the mixture again and fill tart shells. 3. Bake 15–20 minutes, until golden brown.
