Honey Yogurt with Cherry Compote

1 lb. fresh cherries, pits removed 3 1-inch strips lemon zest 3 tablespoons sugar

1½ cups plain Greek yogurt 3 tablespoons wildflower honey Pinch of coarse salt

Preparation: Bring cherries, lemon zest and sugar to a simmer over a medium heat, cooking 8—12 minutes until fruit is tender and juices coat a spoon. Remove lemon zest and allow cherry compote to cool. Mix yogurt, honey and salt in a small bowl. Divide yogurt into four serving bowls and top with cherry compote.
