There’s nothing quite like being on a bike. Without a giant metal shell surrounding you, there’s nothing but the wind sweeping past as you cruise down the road. Usually, my wife joins me on the backseat. It’s always a good time to take in the scenery together and explore some of the beautiful roads around the area. A few times, we’ve gone up to Lake George for the big Americade bike rally. It was always a blast to watch the thousands of bikes on the main drag and spend some time just relaxing and riding around. Once, we took a seven-hour trip to visit some relatives out in Pennsylvania, which was quite an experience. It was the perfect trip, winding through the Pocono Mountains, checking out the huge vistas with trees as far as you could see, and of course, stopping often to take breaks. “THERE’S NOTHING QUITE LIKE BEING ON A BIKE. About 20 years ago, when I was buying my first

house, I had to scrounge up every cent I could to cover the closing

costs. As I scrambled to come up with the cash, I cleaned out all kinds of stuff around the house, whether I still used it or not,

I needed the money. I begrudgingly sold my old motorcycle. I didn’t ride it all that often back

then, so it seemed like the logical thing to do.

I regretted my decision almost immediately. Of

course, it probably was the right decision at the time, but I found it difficult to get the bike

out of my head. For the next 10 years, anytime I’d see a biker speed past us on the highway, I’d pine for days gone by when I could join them on the open road. One day, my friends were talking about the journeys they’d taken recently on their bikes, and I just couldn’t take it anymore. I began to shop around for a new bike, until I finally landed on a reasonably priced Suzuki. It wasn’t anything fancy, but it was clear that it would get the job done. I bought it, and I’ve been riding on and off ever since.

Unfortunately, these days, I don’t get out on my bike much, mostly because of how busy I am running the business. Still, as it starts to get warmer, I’m already itching to dust it off and take it for a spin. I’m hoping I’ll get the chance (and the motivation) to finally bring it out of storage and take a few long trips around the countryside with my wife. I can’t imagine any better way to celebrate the start of spring.

THE COLDEST PLACES ON EARTH

VOSTOK, ANTARCTICA This quaint location serves as a Russian research outpost in Antarctica. It was named after the captain of the first Russian Antarctic expedition. Underneath the station lies Lake Vostok, the largest subglacial lake in the world. Once, it reached a record of 128 below zero on July 21, 1983, which is the record for the world’s lowest recorded temperature to this day. MOUNT WASHINGTON If you’re wondering about a cold place a little closer to home, this year, New Hampshire’s Mount Washington was the second coldest place on Earth in 2018. The mountain plummeted to -36 F on Jan. 6, with a wind chill of -94 F. In 2017, the coldest spot on Earth was a tie between Eureka, Nunavut, in Canada and Jakutsk in Russia.

OYMYAKON, RUSSIA Omyakon, a rural town in northern Russia, is only a few miles away from the Arctic Circle and is home to a few hundred people. The temperature in Oymyakon has averages 50 degrees below zero year- round, making it the coldest place on Earth actually inhabited by humans. The freezing weather not only keeps the ground frozen solid, but it makes a lot of technology useless.

BRAISED CHICKEN AND SPRING VEGETABLES

INGREDIENTS

• 4 large carrots, cut into sticks • 1 tablespoon sugar • 2 tablespoons fresh chives, chopped • Salt and pepper

• 1 tablespoon olive oil • 8 small bone-in chicken thighs • 1 cup low-sodium chicken broth • 12 radishes, halved

DIRECTIONS 1. Heat olive oil in a large saucepan or Dutch oven over medium-high heat. 2. Season the chicken with salt and pepper. Brown in pan for 6 to 7 minutes per side. 3. Remove chicken from pan and scrape off excess fat. Add broth and stir in radishes, carrots, and sugar. 4. Return chicken to pan, placing on top of vegetables. Gently simmer with lid on pan for 15 to 20 minutes. Finish with chives.

Spring is here, which means flora will soon be in full bloom. Flowers can be an easy pick-me-up or a great way to add color to your home, but some people take their flower obsession to the next level by planning botanical-themed vacations. Here are some of the most impressive gardens and flower displays in the world. NETHERLANDS Holland, most famous for its tulips, always draws visitors at the first sign of spring. One of its most famous destinations, Keukenhof, located in Lisse, is among the world’s largest flower gardens. The park is 79 acres and boasts approximately 7 million flowers each year. This colorful garden is open annually from mid-March to mid-May, but mid-April is the ideal time to see the tulips. WASHINGTON, D.C. Besides the monuments and historic buildings, one of the biggest attractions in Washington, D.C. is the cherry tree blossoms. Travelers who visit the Tidal Basin during the spring can witness 3,000 trees, which were a gift from Tokyo in 1912, flaunt their beautiful pink blossoms. The best time to see the spectacle is from the end of March through the end of April. ANZA-BORREGO DESERT STATE PARK Desert lavender, flowering cacti, pygmy poppies, and rock daisies are just a few of the many wildflowers decorating Anza-Borrego Desert State

Park. The various native species are often seen weaved together to form a colorful carpet over any barren patch in the park, which is located just two hours from San Diego. In addition to flowers, visitors

often spot bighorn sheep. Wildflower blossoms vary in intensity each year, but they typically begin to bloom in late February or early March.
