Cookie Craze

FORMER ERIN BAKESHOP OPENS BRICK-AND-MORTAR STORE IN MARSVILLE

STORY BY ALEXANDRA JAGOE

These aren’t your average cookies. Rich, decadent treats stuffed with Belgian chocolate chunks, rich caramel, gooey marshmallows, and more chocolate than you can imagine. These cookies take sweet treats to the next level—they are an experience. “A cookie or a baked treat—it’s a moment in time for somebody,” said Rebecca Billis of Lumbersnacks Bakehouse. She and her husband started the business, selling decadent cookies at markets across Southern Ontario after moving to Canada from England in 2021. “I’ve always loved baking,” she said, adding that she started learning as a child alongside family members who were skilled at whipping up delicious treats. Back in England, Billis worked as a counsellor, but wanted to do something different here in Canada. “Baking is really therapeutic,” she said. At first, the differences between Canadian and English ingredients were jarring: the ovens were unfamiliar, there were so many different types of flour, and she had a hard time finding true, high-quality Belgian chocolate. Now, Billis orders her favourite Callebaut Belgian chocolate in large bags to craft her array of creations. “I love that chocolate, and I love what it stands for,” she said, adding that not only is it high quality, but it is also sustainably sourced.
