Lumbersnacks started at farmers’ markets and events, serving up iconic creations like the “Cookie Monster,” a big blue chocolate chunk cookie with a googly eye and half an Oreo for a mouth. They display each cookie cut in half to show its luxurious filling on a live-edge board, while all treats for sale are individually wrapped for freshness. Billis likes to think outside the box, taking classic desserts and putting her own spin on them. “It’s just something I absolutely love—it comes from the heart,” she said. “I never run out of ideas.” From cookie pies to a cookie croissant, known as the “Cruffin,” Billis is always pushing the envelope with her baking. Every Easter, she makes a cookie stuffed with a Cadbury Creme Egg imported from the UK, which sells out fast. She also crafts handmade Dubai bars stuffed with pistachio cream imported from the UK and house- baked kataifi (fine threads of dough all enrobed in rich, creamy Belgian chocolate). Over the years, Lumbersnacks has developed a loyal fan base who come out to events just to grab a sweet treat. “There’s a lot of love that goes into what you do,” she said, explaining that what she does goes deeper than baking fun goodies—it’s about providing people with a moment to stop and savour, or even transporting them back to sweet childhood memories. She remembers meeting a Scottish woman who tried

one of her Millionaire’s shortbreads and told her it felt like sitting in the kitchen with her mum and granny back home. “To me, that’s priceless,” Billis said. Now, Lumbersnacks Bakehouse has moved from a home-based operation in Erin to its first brick-and-mortar location in Marsville, just north of Hillsburgh. The cozy bake shop in the hamlet’s four corners offers sweet treats fans know and love, as well as a few exciting additions. The shop sells fresh-baked bread, savoury pastries, and they are thrilled to announce the upcoming opening of Lumberscoops Ice Creamery, which will feature 20 flavours of Kawartha Dairy scoop ice cream. Of course, we’ll be serving the classic British favourite — the iconic “99” cone topped with a Cadbury Flake. “We truly cannot express how grateful we are for the incredible support we’ve received from everyone who has walked through our doors. The repeat customers, kind words, and enthusiasm for our gourmet treats have meant the world to us,” Billis said. Orders can be placed online at lumbersnacks.ca , or by email at lumbersnacks@outlook.com. Lumbersnacks Bakehouse is located at 62406 County Road 3, Marsville.
