Cook quinoa according to packet instructions. Dice chicken and cook in small pan. In a separate non-stick pan, cook egg, without stirring. Once cooked through, put egg on cutting surface and chop. Using egg pan, saute mushrooms, green onions, and carrots until tender. Stir in quinoa, pineapple, and egg pieces. Add chicken to vegetable mixture. Add soy sauce and stir.
